An Experiment : Luncheon Meat and Potato Patties

I opened up a can of luncheon meat about two weeks ago and I had some leftovers in the fridge. I have had leftover luncheon meat go moldy on me and I was determined not to let that happen again.

When I was in school, I remembered a friend mentioned that her mum made fried patties using mashed luncheon meat. That story stayed in my head for a very long time.

Since I had some potatoes in the fridge, I peeled and steamed them until tender. Then I mashed the potatoes and luncheon meat together.

I added some onion powder, chopped chives and lots of pepper. There is no need to add salt as luncheon meat is already quite salty.

The mashed ingredients were formed into balls, dipped into beaten egg and shallow fried till browned.

These luncheon meat patties were very tasty. But I made a mistake. I steamed the potatoes a bit too long and they became too soft. So I ended up with soft fragile patties.

I have another can of luncheon meat in the pantry and I might have another go at these delicious patties.

  1. At first look, if you didn't tell me those are luncheon meat patties, I'd think they're begedil...which I love too but don't know how to make (those that I buy from Malay stalls, the egg is all frizzy and crispy as they deep-fry them, something I'm not willing to do at home!). These are a lot easier...ooo, I'm so going to make these. ^.^

By the way, how do you get the sides so golden brown if you shallow fry? Unless your definition of shallow frying is different from mine...haha! :D When I shallow fry, only the top and bottom gets browned as the oil would probably reach a quarter way up the patties only. The only way to get the sides browned is to stand them up and keep rotating them in the oil but that is not feasible as it would involve too much time rotating each patty. So, I'm assuming you use a lot more oil in your shallow frying to not have to stand them up? ^_~

    1. OK, maybe my shallow isn't so shallow hee..hee... The oil reaches halfway up the patties, so it is neither shallow nor deep. I can't wait to see your version hee..hee...

  4. Looks like begedil! Maybe you would like to fry the potatoes instead of steaming them, then mashed it into patties. they do this in making begedil. This helps to reduce sogginess and make the patty easier to shape. anyway, never tried making begedil using luncheon meat. Thanks for idea!

  9. What a good timing! I have 5 assorted tins of luncheon meat sitting on the shelf. I kept buying different brands to try and experiment but never had the time. I will definitely want to fry these patties as it is very easy from your recipe.
