This is a cake you want to bake on a day when you have a lot of free time. I never do as I say and I baked this cake on a Saturday when there were heaps of things to do. I had two combs of browning (on the verge of blackening) bananas waiting to be baked and then there's the laundry and the usual housekeeping.

This is one of the earliest cakes that I baked when I first dabbled in baking two years ago. I was very inexperienced and took the cake out too early. It looked baked as the top was firm and already set. But when I cut the cake, oh dear! The middle was still wet and gooey. But.....I tell you, it tasted so gooood! I could have just scooped that gooey batter and kept on eating it but I was not sure if I would get sick. I threw the cake away as it wasn't any good to keep or share an under baked cake.

I was actually reluctant to try this recipe at first because the first step said "Line two 23cm (9") springform pans..." suggesting that this is a big recipe. But when I looked at the filling ingredients, it called for 550g of cream cheese. I usually use 500g of cream cheese for an 8" cake and my brain went into overdrive to compute if I should go ahead and use the recipe as is for just one 8" cake. Besides, I am not exactly crazy about coffee flavored cakes or coffee flavored anything. I like coffee as a drink and that's it.

I had two bottles of Nutella with leftovers sticking to the sides and I did not know what to do with it. There must be about 100g plus of Nutella from the two bottles combined. It would be such a waste to throw it away. So I left the Nutella on its own and simply ignored it. And then Wendy came up with her Nutella Week series. Ahah, salvation!
