During our Chinese New Year dinner, my sister-in-law told us that she is crazy over avocado. She has this craving for avocado and wants to eat it all the time.
Well I can't blame her because I too have a thing for avocado. It is rich, nutty and creamy and is a fantastic addition to a salad.
The only reason why I don't eat avocado as often as I like is due to the cost. It sits among luxury (by my standards lah) food items like blueberries and strawberries. I can't even bring myself to buy blackberries or raspberries.
After my sister-in-law's avocado confessional, I simply could not resist indulging in her sin, so to speak. Ah, life is short. Be a devil. Have an avocado!
So. I went to Jaya Grocer to get me a pack of three avocados on a Monday (so that they have enough time to ripen by Saturday). Then on Friday, I bought a can of black beans, tomatoes, cilantro and some key lime.
When I took the avocados home, they were still green and unripe. I just left them on the dining table for nature to take its course. By Friday, they turned dark, almost black and was soft when I pressed them gently with my fingers. So I kept them in the fridge to stop the ripening process.
The first time I made this salad, I added some pan fried chicken. It made for a very hearty meal. Actually, with the avocado and black beans, you don't need any meat. Trust me, you will find that these two ingredients are "meaty" enough to satisfy your appetite.
Avocado, Black Beans and Tomato Salad
Recipe source : Adapted from Little Spice Jar
Ingredients :
- 1 avocado, cubed
- 100g cherry tomatoes, cut into halves
- 200g canned black beans
- 1 big onion, thinly sliced
- juice of one key lime (limau nipis)
- salt and pepper to taste
- 1 tbsp olive oil
- a generous handful of cilantro, finely minced
Method :
1. To make dressing, mix lime juice, olive oil, salt and pepper.
2. In a bowl, add avocado, cherry tomatoes, black beans, onions and cilantro.
3. Add dressing and toss.
4. Serve immediately or chill in the fridge.
Note : To prevent the avocado from browning (especially of you are serving the salad later), toss the avocado cubes generously with the lime juice dressing.

DeleteSam & I like avocado but it is too expensive to eat regularly and I always couldn't get a nice avacado, it's either cannot ripen well or too ripe ~>_<~ I thrown away many of them, so wasted ~>_<~
ReplyDeleteThe one I bought also got slight problem - the seed stuck and cannot come off. Had to korek to get it out >.<
DeleteMy girl loves avocado too but same opinion as Choi Yen above. A sheer waste of money but that does not stop us from buying and hoping for the best.

DeleteI love avocado too..those in the supermarket more expensive, I usually buy from Tamu or stalls at the kaki lima. Some turn bad even before they are ripen..agreed with Choi Yen and Suituapui.

DeleteI super love your avocado salad as I love to eat avocado too and the cheapest avocado I can find is RM3 for one imported from the Philippines. I have even bought one for RM12 from Australia. If only they are more affordable.

O_o Anyway, as I was saying yesterday, I love all kinds of berries (I recently got myself some Korean strawberries) but they're too expensive to indulge in often...avocados included + I don't buy them coz I don't know how to choose. Afraid that they won't ripen nicely and it goes to waste, so better stick to eating the ones outside :)
ReplyDeleteOh dear! I checked my spam folder and it wasn't there. Never mind. So far the avocados I bought are OK except the latest batch - the seed won't come off. So I had to dig it out using a teaspoon >.<
DeleteMy wife is crazy for avocado and could drink 2 glasses of this neat Avocado juice. It is Bluek to me! I won't mind trying the salad with avocado bits being tossed inside. I want to embark into this salad diet to reduce my weight now.
