You know, I got tired of eating salad. Really. I stopped making and eating salads. It was getting boring with the same old French dressing that I usually use. The vegetables were getting boring too.
Well, I needed a boost. A salad rejuvenation of sorts. That happened at Salad Atelier when I ate the taco salad (known as The Cartel in the menu). It was so good that I googled for taco salad and I found a few videos on Youtube.
That was when I came across Catalina dressing which is used to dress taco salad. I have never heard of Catalina dressing but since this is the dressing for taco salad, I had to make it.
There are quite a few ingredients that go into this dressing and I used my immersion blender to mix everything up.
Such a convenient tool, this. It's a whole lot more convenient to use compared to a conventional blender. Easier cleaning too.
So anyway, I got my dressing all nice and emulsified.
And I had a taste. My first ever taste of Catalina dressing. Mmmmmm..... it was so good!
I poured the dressing into two bottles (my recycled taucheow bottles hee..hee...) and kept them in the fridge.
And then I made a taco salad.
Dressed the whole lot with this awesome Catalina dressing.
And got me a big bowl of something that made me fall in love with salad again.
Oh yes. My home made taco salad. So good.

- 1 cup tomato ketchup
- 2 tbsp brown sugar
- 1 cup white vinegar (I used distilled vinegar)
- 1 cup light olive oil
- 1 tsp sea sat
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 yellow onion, diced
1. Put all the ingredients into the beaker of your immersion blender and blend until the dressing is emulsified.
2. Or alternatively use a conventional blender or just shake in a bottle like what Betty does.
3. Transfer the dressing into a bottle or suitable container and keep in the fridge.
