Chicken, Eggs and Brussels Sprouts

Ah! When was the last time I ate Brussels Sprouts?

I saw these on sale at Jaya Grocer. One box is RM9.90 and two for RM16.80.

I gave these a wash early in the morning and air dried them after which I sliced them into halves before cooking.

Then I drizzled some red palm oil (instead of olive oil, support our local palm oil) over the Brussels Sprouts. I also added few cloves of garlic.

Since I still have a lot more Nando's Soy and Honey sauce, I marinated two chicken chops overnight.

Five minutes before the chicken was done, I topped the chicken with butter.

The melted butter added extra ooomph to the flavors. Any excess (plus juices from the chicken) dripped down onto the roasting Brussels Sprouts.

I left the vegetables to cook another 5 minutes.

If you love roasted vegetables, you must try roasted Brussels Sprouts (if you haven't already). They are delicious.

I love fried eggs with my meals.

This was my lunch. Dinner was the same. Two very satisfying meals!

  1. Good morning! Have a good Public holiday ahead. I wanted to try steaming and cooking broccoli 🥦 with bits of garlic like you and eat steamed like that but I have no time so I resorted to eating grilled chicken chop with white rice and seasoned veggies for lunch ytd Sunday.

    1. Good morning! I had a great day yesterday. I used to steam broccoli and marinated chicken meat and eat with a condiment made with soy sauce, vinegar, garlic and chilies.

  2. As promised, something different in this post of yours, Brussels sprouts. Nope, I don't think I had tried this veggie before. Before being cut, it looks like big round cabbage. When it is cut and being roasted, it looks like broccoli 🥦 from far. Now chilling at Coffee bean, with a cold brew caffeine at S$6.60 with the book you gifted me to read and enjoy a good laugh! Thanks!

  3. I can't find brussel sprouts in the usual supermarkets near me, if not, I'd roast them too...they look deliciious. These days, your plates of food look more appetising to me because of the inclusion of a good portion of vegetables. ^_~

  5. Both your lunch and dinner meals sound and look so tempting with the Nando's sauce and butter onto the chickens, the runny fried eggs and veggies with cloves of garlic. I don't think I have the patience to cook like this on a busy and sunny day when I will sweat like mad in the kitchen lol ! Unless 5 to 10 mins will Kao Tim! Hee hee.

    1. This meal is actually very easy and quick to put together. But of course can't be ready in 5-10 minutes LOL!

  6. Dear PH, I had finished reading the "When I was a kid 2 (childhood stories by Boey)" today. Half read when I was outside chilling at Coffeebean and the other half read when I was home, so many parts that I can relate to and they make me laugh with joy. Yet on the other so heartwarming and sad when Boey wrote about bonding time with his Daddy and Mom and when they grew old. Thanks dear, it was such a wonderful book!
