I've Lost That Baking Feeling

Did you realize that I haven't baked for a while? Of course you did. After all, I started off as Phong Hong Bakes and then I realized I couldn't live up to that name and changed it to Phong Hong Bakes & Cooks.

So where is the "Bakes" part you ask? Does baking chicken wings count? I don't know why, but I lost my baking mojo again.

One moment I would be planning a bake and when the day comes, I'm not in the mood. The thought of lining a baking pan and weighing the ingredients just puts me off. Terrible, isn't it?

It's just a phase I hope because I'm craving for a warm  chewy cookie right now. And you only get to enjoy those if you bake them yourself.

Anyway, instead of baking cookies or cakes, I baked me some chicken wings. Only 4 wings? These were very large wings, much bigger than regular wings. I just grabbed them at the supermarket one weekend without noticing their size. Frankly, I prefer smaller wings.

The ingredients for these wings not complicated. I had all of them in the my kitchen. In fact I was so lucky I found a lonely lemon on the fridge. But I chose to omit two ingredients - cili padi (did not want the wings too hot) and honey (lemon and honey reminds me of lemonade).

The wings turned out not too bad - salty, spicy and tangy. They went rather well with a refreshing salad. And I can tell you that I had these for lunch and dinner. Two wings per sitting. Ah, for once I am such a "dainty" eater!

Hot and Spicy Chicken Wings
Recipe source : Adapted from Daily Meal Sets Made Simple (page 103)

Ingredients :
- 4 large chicken wings

Marinade ingredients :
- 3 cloves garlic, finely minced
- 1/2 tsp sea salt
- 1 tsp freshly cracked black pepper
- 2 tsp smoked paprika
- 1 tsp cayenne pepper
- zest from 1 lemon
- 1 tbsp lemon juice
- 1 tbsp olive oil

Method :
1. Mix all the marinade ingredients together.
2. Put chicken wings into a plastic bag and pour the marinade in.
3. Using your hands, squish the wings to distribute the marinade and coat all the wings. Set aside for a few hours or overnight.
4. Bake the wings at 200C for 25 minutes or until cooked.

  4. Oh dear, you cannot be baking all your life and might get bored for sure. Even Martha Stewart had to branch out from her kitchen into house & flower decors before entering jail and out with even fresher ideas! She is still popular & well loved. You should name your blog - Phong Hong Bakes, Cooks & Jokes. Wears slippers to Ballroom @ Ritz Carlton!

Hey, I sukak your sayap ayam. Told you before that I often baked 100 wings to feed my college friends in US. It was so easy, tastier and no spills from frying mess. I will trying your recipe to marinate! Otherwise I would buy ready-marinated ones from Tesco to bake.

  5. Lost that baking feeling? Not a problem as I prefer you bake food than sweets. Your wings have such a nice colour that I may be finally tempted to 'invest' in two spices...smoked paprika and cayenne pepper. As I don't cook often enough with ground spices, I don't buy them as they usually expire before I can finish using them + they're expensive if you 'invest' in one too many bottles. The only bottle I buy over and over again is black peppercorns as I enjoy freshly cracked black pepper in all my food.

On a side note, I always look forward to reading TM's comments on your blog as he never fails to crack me up! :D

    1. Smoked paprika and cayenne pepper is very useful when you want to jazz up your roasted chicken or wings. Can also use for cooking savory rice like paella. I have also been guilty of buying too many spices/herbs only to see them expire. Hey, I love black peppercorns too and always have this in my pantry.

Yes, TM is one crazy guy hah..hah... his comments crack me up too :D

  7. No worries, I don't bake either...cakes and cookies, that is. But I do cook stuff in the oven, pies...or chicken, for instance. I guess that's baking too, no?

    1. hee..hee.. right now I hate the thought of measuring. Unlike cooking where we can just agak2 and throw in our ingredients!

  14. Don't worry, PH. It is just a phase. I don't think you can stop baking forever. Stop watching horror movies and start watching people baking this and that. Your baking mood will come back soon ^_^
