Slow Cooker Chicken


My first post for 2016 and it has to be a blah looking chicken leg. LOL! I have tried this Slow Cooker Chicken three times already and this version I like very much. The flavors suit me and I like the fact that it is so easy to cook.

I have adapted this recipe from Nom Nom Paleo and I left out tomato paste because it tasted yucky to me. I simply do not like the taste and smell of tomato paste.

Besides tomato paste, the original recipe uses ghee, leeks, garlic, chicken stock, poultry seasoning and fish sauce. And of course chicken hah..hah... This time, I just went freestyle and just chucked whatever I had into the slow cooker.

I started off by sauteing some chopped garlic, carrots, leeks and celery. I only seasoned the vegetables with pepper because I was going to add soya sauce and oyster sauce to the chicken.


Then I put all the vegetables into the slow cooker.


The chicken is then placed on top of the vegetables and I poured a mixture of soya sauce and oyster sauce over the chicken.


The I let the whole lot cook for 5 hours on auto. 


After 4.5 hours I noted that the chicken was cooked through and I removed it. I let the vegetables cook for another 1 hour because they were still not soft enough. There was quite a bit of liquids in the pot which came from the vegetables and chicken.

I used an immersion blender to blend the vegetables but I left them chunky. Upon tasting, it was perfect. It was salty enough and full of flavors. It just needed more pepper.


I know it doesn't look very tasty but trust me, the gravy was delicious! I did not need to add any chicken stock because all the natural flavors from the chicken and vegetables was enough to make this dish very tasty. 

I'll definitely cook this again when I want a hassle free meal. I can use different vegetables to for a different taste. Do try this if you have a slow cooker. Go forth and experiment!









Slow Cooker Chicken
Recipe source : Adapted from Nom Nom Paleo (page 198)

Ingredients :
- 1 whole chicken
- 6 cloves garlic, choped
- 1 stalk leeks, sliced
- 3 ribs celery, sliced
- 1 carrot, sliced
- 2 tbsp light soya sauce
- 1 tbsp oyster sauce
- pepper to taste

Method :
1. Heat oil in wok and saute garlic until fragrant.
2. Add leeks, celery and carrots and saute until vegetables are wilted.
3. Transfer to slow cooker.
4. Place chicken on top of the vegetables.
5. Mix the light soya sauce and oyster sauce together and pour over the chicken.
6. Place the lid and switch on the cooker on low (mine I used the auto function) and cook for 4 to 5 hours (or until the chicken is fully cooked).
7. Remove the chicken and set aside.
8. Using an immersion blender, blend the vegetables to produce a think creamy gravy.
9. Serve the chicken with the gravy.

  2. Wow! After 4.5 hours and the veggies still not cooked?? Did I read wrong?
    I believe the gravy tasted delicious as the chicken essence is always yummy. I think Agnes Chang told me once that we could always start off the slow cooker at "High" temp like 1-2 hours and shift to auto later. That Grand Dame of Kitchen is full of cheerful ideas and advised me to eat out lesser! **shy**

    1. The veggies were cooked but not as soft as I would like them to be. I think because I cut them too big. I usually start with high then switch to auto but this time I was busy and decided to just leave it on auto.

I can't imagine that a whole chicken can soften in 4.5 hours but not the vegetables (coz I use the same veggies to make borsch soup and they soften in about half an hour but that's with some liquid, of course). I believe when you say it's tasty even though it doesn't look tasty (like you said). May I suggest that you sear the chicken in your wok (to add a bit of colour on the skin first) since you already need to wash the wok after all (after sauteeing your veggies)! ;D

    Hey, I have the same Panasonic blender as you...so I can try this recipe but it'll take me days to finish one whole chicken wor ;)

    2. I cut my veggies too big and that's why they were still not that soft. The chicken was a small one, so it cooked faster. Yeah, good idea to sear the chicken but heh..heh...too much work lah...

  6. Hahaha blending the veggies into gravy. That's very angmoh style! :D .. I won't do that, Lazy Man is lazy to wash another blender on top of slow cooker...

    You already making natural chicken and veggie stock there, if you go and add some ciplak chicken stock MSG powder, that would be really stupid in my opinion :/ ...

    1. This one is ang moh style recipe...I originally thought of leaving the veggies as they are but then, at least once lah I want to try blending to see what's it like. Not bad, I quite like the tasty vege puree.

  8. Oh, nice recipe! I want to try this cos I like leeks and celery.. but I don't think I will blend the vegetables.. first thing, no blender.. second thing, I like to eat them just like that... yummmsss!!

    1. No need too blend lah. Next time, I won't bother. Just eat the veggies as they are since they are already nice and soft and tasty.

  10. Hi Phong Hong, my hubby will love this whole chicken. He likes to separate the chicken by tearing instead of chopping into pieces. This is a complete dish good to serve with rice, buns or noodles.

  13. One whole chicken used? The veges must be very tasty - cooked with the juices from the chicken. Nice dish but too much work to use the blender.

    wow, cooking the chicken slow and gentle for 5 hours!! i am sure the veggie were equally tasty as they have been absorbing the essence of the chicken for 5 hours, i think the veggie tasted like chicken and the chicken tasted like veggie?? i think i will just hantam the chicken and veggie like that and won't bother to blend the gravy, haha.. okay, i can now "smell" the aroma like Small Kucing.. :p

    1. Happy New Year! Indeed I enjoyed my chicken very much hah..hah... All the flavors from the chicken and vege were great because they campur-campur together. I would definitely cook it again with double the veggies for more gravy.
