Chonggak Kimchi

Chonggak Kimchi or ponytail kimchi is kimchi made with baby radish.


The first time I learnt about chonggak kimchi was from Maangchi's Youtube channel.

Over here young radish is not available and even if it were, I won't bother because it is so tedious.

When I watched these two videos, the mixing process made my mouth water ..... hah..hah..hah...



I was curious about chonggak kimchi and when I saw it on the supermarket shelves, I grabbed a packet.


When I tried it, ooohhh... they were very tasty!


The ingredients appear quite clean maybe except for the artificial sweetener and fructose. But those would have been digested by the microbes.

The only downside is the packaging which is foil (aluminum) and acid + aluminum is not a good combo >.<


So I should not eat this too often. I transferred the contents into a glass container.

Eat this with rice and pork belly and I am in heaven!


Well, maybe I could use the kimchi paste recipe and make with regular radish.


This was my Sunday lunch. Loved it!

    I would like to try this ponytail kimchi but it looks quite hard and my teeth are weak

    1. Thanks! The chonggak kimchi is not that hard though it is crunchy. You could cut it into smaller pieces before eating. I usually cut them into chunks before I eat.

  3. I missed pork belly like yours. Not fried, just boiled and cooked the way you did. Hong nom nom nom slurps! About probiotics and good bacteria in kimchi which I can only take during cooling and windy weather as I cannot take spicy food. I was studying about this E-coli Bacteria online, the more I study and the more I ready about it, the more giddy I get, LOL! E-coli bacteria can be a bad bacteria yet can be a good bacteria to some, depending on the health conditions of each individual. The more I read, the more sleepy I get, yawn! Lol! Ciao! See you tmr.     1. Some kimchi brands are not so spicy. If I am not wrong Jongga kimchi has a mild version (which I don't like LOL!). I have been listening to Youtube podcast on the gut microbiome and it is amazing what the bacteria can do. It can even influence our cravings eg the sugar loving bacteria can send messages to our brain via neurochemicals and we then go and eat sugary food. Very scary! LOL!
