Luncheon Meat Fried Rice


When I posted Fried Rice with Long Beans some of you commented that you use French beans and lap cheong (Chinese sausage).

One day I defrosted a portion of rice and I was craving for some luncheon meat hee..hee..hee... I also had some lap cheong in the fridge and I specially bought a packet of French beans for the fried rice.


There was quite a bit of slicing/chopping to do - the luncheon meat, lap cheong, cili padi, French beans and garlic.

I used a big wok because there is more room to toss the ingredients around. I started with frying the lap cheong until browned and I dished it out. Then in went the luncheon meat cubes, also fried till brown. These were also removed from the wok and it was the garlic's turn in the hot oil.


When it was fragrant and slightly browned, I threw in the sliced French beans together with the cili padi and them gave a toss. Then I pushed the beans aside and poured in two beaten eggs.

Once the eggs were almost set, the rice went in together with some seasonings made from light and dark soya sauce and a bit of fish sauce. The whole lot was tossed until all the ingredients were well mixed.


If you are feeling particularly indulgent and not caring about your health, you could serve your fried rice with a slice of luncheon meat which had been coated with beaten eggs and fried. Mmmmm.....


This fried rice makes a very nice packed lunch too. 


I think I may be over indulging in carbs and it is time to cut back lest I get back to wearing my fat pants again. Oh no. I think I already threw them away!

Fried Rice with Luncheon Meat

Ingredients :
- 2 cups overnight rice (in this case defrosted frozen rice)
- 1 lap cheong, casing removed and thinly sliced
- 2 slices luncheon meat cut into cubes
- 4 cloves garlic, chopped
- 10 French bean, sliced diagonally 
- 2 eggs, beaten

Seasoning, mix together :
- 1 tbsp light soya sauce
- 1 tbsp dark soya sauce
- 1 tsp fish sauce
- pepper to taste


Method :
1. Heat oil in wok and  fry lap cheong until browned. Dish out and set aside.
2. In the same oil, fry luncheon meat cubes until browned. Remove and set aside.
3. Next, fry the chopped garlic until fragrant and slightly browned.
4. Add sliced French beans and stir fry briefly.
5. Push the French beans aside and pour in beaten eggs.
6. When eggs are almost set, add rice and seasoning.
7. Also add the fried lap cheong and luncheon meat.
8. Toss all the ingredients together until rice is well coated with seasoning and mixed with the other ingredients.
9. Serve!

  1. Have not fried rice with luncheon meat for a while now. Last time I did, my mum was in hospital and I brought some for me sis to eat. She said it was more like fried luncheon meat with rice, so much meat so little rice. Hehehehehehe!!!!

  4. egg-coated luncheon meat - actually, i've never had that before ... and now i want to! :D if you want to be doubly decadent, you could also wrap the fried rice in an omelette, like nasi pattaya :D

    1. I am surprised you've not had that before. Some chap fan stall sell those yummy fried luncheon meat. Ah, nasi pattaya! I must attempt that next :)

  5. Many people would love this fried rice! I don't dare to eat luncheon meat nowadays because I always imagine that I am eating rat meat. Yikes! Sorry, don't mean to give that image to you too.

Wah, double the goodness...with luncheon meat & lap cheong! ;) So I see you subscribe to the same method too...fry the ingredients separately, I think this is the best way to get it well caramelised...hehe. Ah, I like your fried rice with the extra egg-coated fried luncheon meat...best-nya. And you don't have to worry about wearing fat pants...coz your packed lunch is such a small portion ah! ^_~

    1. What a good post! My wife will go overseas next week for one week and I will be "Home Alone". I think I will ask her to fry a wok of fried rice using your recipe for me to eat daily. I will quietly fry luncheon meat to add on since she has banned me from eating canned meat!! hihihi

    2. Welcome back! Yes, yes, get your wifey to fry a big batch if rice for you. Can keep for a few days in the fridge. We have to go slow on canned meat. Once in a while is ok to indulge :)
