Roasted Tomato Salsa


The other evening I was flipping channels on the TV. That was when I chanced upon Paul Hollywood's TV show, Bread. Any fans of Paul Hollywood here?

Ooohhh....I love watching the man kneading dough. So sexy, I tell you hee..hee... He makes it all look so simple. Then the next thing is you see is him pulling out a beautiful loaf from the oven.

On that particular episode, he made Tortilla Towers. These are tortillas layered with a spicy shredded chicken, guacamole, sour cream and salsa. It looked incredibly delicious.


I was rather taken with the salsa (and of course the spicy chicken) and I knew that I had to make it. So I roasted 4 ripe tomatoes, 2 jalapenos, 2 red onions and 4 cloves of garlic until they were charred.


All these were blended in my mini food processor together with a bunch of coriander leaves, lime juice and some salt. 


Loved the salsa! Tangy and smoky and so exotic tasting. It reminded me of the salsa I had at Chillis but so much better. If you love salsa, try this one.

Roasted Tomato Salsa
Recipe source : Adapted from Paul Hollywood's Bread

Ingredients :
- 4 ripe tomatoes, halved
- 2 Jalapenos, halved
- 2 red onions, cut into wedges
- 4 cloves garlic
- 2 tablespoons olive oil
- 1 tsp sea salt or to taste
- juice from 2 limes or to taste
- a generous handful of coriander leaves

Method :
1. Place tomatoes, jalapenos, onion wedges and garlic into a bowl and toss with olive oil.
2. Then pour the ingredients on a baking tray (place tomatoes and jalapenos skin side up) and grill until the tomatoes are charred.
3. Blend all the ingredients in a food processor together with coriander, lime juice and salt.
4. Taste and adjust for seasoning.
5. Transfer salsa into a serving bowl or may be stored in an airtight container in the fridge for up to 3 days.

  5. Wow! This is coincidence again and we seem to enjoy ANYTHING from ANNIE-1 to Starling to Uptown to Home Kitchen and now we can dance Salsa!! I have been making gallons of Salsa sauce for Tortilla dips during our home parties and my wife's ex classmates love them like drug addicts getting a Salsa fix. You surprised me that you added roasted tomatoes, jalapenos, onions and garlic until charred. I would name this crazy sauce as Salsa Bakar!!! Fulamak.

    Hmm... I would definitely roast my secret ingredients for next round to kill my curiosity since I trust this Ah Hong Chee. Hee Hee hee!

  6. I love salsa...even better if it's roasted for that extra smoky flavour (must try this recipe). Did you use local or imported tomatoes for this recipe? I think our local tomatoes are a bit too acidic, right? I'm also looking at your roasted chicken thighs...how do you get them so evenly browned! ^.^

    1. I used those Japanese tomatoes that I got from Aeon. They were at the right stage of ripeness. Ah, the roasted chicken thigh recipe will be coming up real soon!

  7. I love the ingredients in Salsa especially eating them with roasted chicken or even nachos ... anything tomatoes I am IN. Even the Indian tomato chutney is so so.. appetizing!
