This was my lunch yesterday. Something simple and light for the first day of my detoxification program. The reason why I have included eggs is because I need some protein in my diet as a purely vegetarian diet during detox makes me feel very weak and miserable. Tofu is of course a good vegetable protein and is one of my favorite foods when I go on a meatless diet.
During detoxification, a low salt regimen is recommended and some programs do not allow any salt at all. I have tried the salt free diet and I am afraid that it made my food so unpalatable that I gave up on the program after 2 and a half days. Besides, I suffered leg cramps at night.
I have opted for Bragg Liquid Aminos in place of salt for the salad dressing. Although Bragg Liquid Aminos is not as fragrant as soya sauce, it was very good in this salad dressing.
Egg and Tofu Salad
Recipe source : Phong Hong's concoction
Ingredients :
For the salad (amount as per your choice)
- Romaine, torn into bite size pieces
- Cherry Tomatoes, halved
- Japanese Cucumbers, sliced thinly
- Spring Onions, sliced
- Hard Tofu (Taukwa), cut into cubes
- Hard boiled Eggs, quartered
- Toasted sesame seeds to garnish
For the Dressing :
- 1 big clove of garlic, crushed
- 3 tablespoons organic brown rice vinegar
- 1 teaspoon raw honey
- 1 tablespoon Bragg Liquid Aminos
- 2 tablespoons extra virgin olive oil
- 1 teaspoon organic toasted sesame oil
Method :

1. Add all ingredients together and whisk to incorporate.

For the salad :
1. Drain the tofu on paper towels and rub some vegetable oil on the surface.
2. Bake it in the oven at 200C without preheating for about 20 minutes until it is lightly brown.
3. Remove tofu from the oven and cut into cubes or desired size.
4. Put all vegetables and tofu into mixing bowl.
5. Add dressing and toss.
6. Top with hard boiled eggs and sprinkle with toasted sesame seeds.
7. Serve immediately.

Honestly, I'm not a fan of fad diets. I like to believe living in a life of moderation. I hope you can see that you are enjoying a delicious egg and tofu salad, not doing a special diet :p

Hi Zoe! I am in total agreement with you, moderation is the key! Actually this is not a detox diet per se, just a salad I put together to eat during my detox. The recommended meals were too bland for me and I believe that food should also be enjoyable during a detox, albeit light and healthy.
