Devil's Food Cupcakes


I used to wonder why this chocolate cake is called Devil's Food Cake. Why devil? Maybe because they are devilish in the sense they are so sinfully good that they tempt you to eat. Pretty much like how Adam couldn't resist the apple hah..hah...

It's a moist chocolate cake which is topped with chocolaty goodness. How could anyone resist that? Devilish indeed!

And I'll tell you another reason why these cupcakes are devilish. They made me abandon my housekeeping duties to bake them hah..hah... 


You know how particular I am with regards to housework and dirty floors. I cannot tolerate dirty floors and an untidy house. But...but.... I want to bake these cupcakes. I have to bake these cupcakes. I need to bake these cupcakes. The devil made me do it!


So baked I did! One thing led to another. And I baked another two cakes. I baked a batch of Red Velvet Cupcakes and a Super Lemony Super Rich Pound Cake. Don't look at me. The Devil made me do it!









Devils' Food Cupcakes with Chocolate Icing
Recipe source : Adapted from Easy Chocolate (page 50)

Ingredients :

For the cupcakes (makes 12 regular sized cupcakes):
- 60g butter, softened
- 1/2 cup grapeseed oil
- 100g brown sugar (this is barely sweet, done on purpose to balance off the sweet chocolate icing. Add more if you prefer a sweeter cake)
- 2 large eggs
- 200g self-raising flour, sifted
- 25g cocoa powder, sifted
- 125ml buttermilk
- 2 tsp vanilla extract

For the icing :
- 125g dark chocolate (the chocolate I used is sweet)
- 3 tbsp whipping cream
- 10g butter

Method :

For the cupcakes :
1. Cream butter and sugar until light and fluffy.
2. Add vanilla extract.
3. Add eggs one at a time, beating well after each addition.
4. Add grapeseed oil and beat until mixture is emulsified.
5. Add buttermilk and beat until mixture is evenly mixed.
6. In a mixing bowl, sift flour and cocoa powder.
7. Make a well in the center of the flour and pour in the liquid mixture.
8. Using a spatula, fold the flour and liquid to form an evenly mixed batter (do not overmix).
9. Scoop batter into lined muffin pans and bake at 160C for 17-20 minutes or until skewer inserted into a cupcake comes out clean. (Mine was done in 17 minutes)
10. Remove from oven and leave to cool for 10 minutes before removing cupcakes to cool on cooling rack.

For the icing :
1. Break the chocolate into small pieces.
2. Melt the chocolate and butter over a double boiler and add whipping cream until you reach the desired consistency.

When the cupcakes are cool, pipe or spread the chocolate icing onto the cupcakes.

  4. I really wish that you would open a bakery shop so that I could buy them to eat because no matter how I beg you for a bite, I won't get it. Now that's a devil food that tempts everyone who reads this post. LOL
    I surrender to all clean freaks like you and my wife!! I am very messy and dirty to wipe my greasy hands on my pants and shirts always.

  5. hmmm, so you spent your long Merdeka weekend baking devil cakes huh?? not just one but three!! no wonder you had no time to do housework.. but wait, while you were baking, why have you not "ordered" your partner to do the housework for you, while you bake to reward him?? hehe..

    chocolate, and to be exact, moist chocolate!! that one i love, i don't actually fancy things made of chocolate (don't get me wrong, i love chocolate, chocolate by itself), unless they are real chocolatey.. moist chocolate cakes are considered one of those that i like, because like you say, good ones are sure kao kao with chocolates and it actually feels like eating chocolate itself..

    so that 4 little small cupcakes?? of course not enough to make you satiable with that, hahaha.. no wonder you still continue baking red velvet cake and also a lemon pound cake!! aiyoh, i am looking forward to see them in your next posts, especially the lemon pound cake, already make me feeling hungry now and imagining that, the citrus makes me drool dei~~

    i better stop this comment and quickly go to sleep, else i might end up hunting for some chocolates to eat from the fridge, at this hour!!! oh no, how sinful and evil!!! hahahahaha :D

    1. hahahah... no, I am the only one who does the housework because I don't like other people to do it. Fussy pot!

      There were 12 cupcakes but only 4 made it to the modelling finals :D The other 2 cakes will be coming up pretty soon.

      You reminded me of Nigella Lawson. In one of her shows, the ending part is always her going to the fridge at night to eat something.

  6. I used to wonder why they call it Devil's Food Cupcakes too! Yours look sinfully chocolaty and decadent. So, we'd be seeing another cupcake from you but I'll be looking forward to your super lemony pound cake....the word super lemony got to me! :D Like you, instead of baking 3 things, I cooked 3 things last week, so I have a 3-part cooking post coming up soon! ;D

  10. I've read somewhere too, devil cupcakes or devil something cakes, I was wondering also why it is called devil.. Now I know.. If add red food colouring, become red velvet already.. But I still prefer simple vanilla/chocolate cupcakes, then top with canggih icing or colourful stuffs.. By the way, out of topic, I saw somepne posted in FB on how to make Bounty chocolates.. I love Bounty chocolates and we can't get it here, unless we go to the airport or some special chocolate shop.. They just put 3 ingredients - coconut, condensed milk and melted (Cadbury) milk chocolate.. I wana try them soon..

    1. Louiz, Bounty chocolates have been around for a long time but never available here. I remember when I was small, I used to see it advertised in the American edition of Readers Digest. Since I don't really fancy coconut in cakes or sweets, I will skip Bounty chocolates but I am looking forwards to yours, if you try and then post it :)
