I am not saying that this Peri-Peri Chicken is the same as the one served at a fast food outlet. But what I will honestly say is that, when I tried their Peri-Peri chicken, I didn't get it. I could not appreciate the flavors. I must have left my taste buds at home.
After that maiden trip, I have since eaten at the outlet another one or 2 times. Again, the flavors did not make an impression on me. I am not saying that it is not good, it is just a matter of my own taste.
So when I came across this Easy Grilled Peri-Peri Chicken, I was quite keen to try only because it looked so good hah..hah... I can't even remember what the other chicken tasted like to make a comparison. But there is no need to compare. This one is way better.
The marinade is made up of smoked paprika, chilli powder, lemon juice, garlic, ginger and salt. Very basic. And best of all, I had all the ingredients on hand.
I used one whole chicken and I even took the trouble to place the chicken on a wire rack to grill. Yup, I dreaded the cleaning up but as it turns out, it was quite easy to clean.
The smell of the smoked paprika was awesome and this Peri-Peri chicken rocks! If you are like me, not impressed with the chicken you ate at the fast food outlet, try this.
Peri-Peri Chicken
Recipe source : Adapted from The Domestic Goddess Wannabe
Ingredients :
- 1 whole chicken, butterflied
- 4 tbsp smoked paprika
- 2 tbsp Cayenne powder (chilli powder)
- Juice from one lemon
- 4 cloves garlic, finely crushed (I used a garlic crush)
- 1 thumb sized ginger, finely crushed (I used garlic crush)
- 2 tsp sea salt
Method :
- Mix smoked paprika, Cayenne powder, lemon juice, garlic, ginger and salt in a mixing bowl.
- Place chicken into freezer bag and pour marinade into the bag.
- Squish the bag to distribute the marinade evenly obver the chicken.
- Leave to marinate in the fridge overnight.
- Before grilling, bring the chicken to room temperature.
- Place chicken on a wire rack over a lined baking tray.
- Grill at 180C for 45 minutes until chicken is cooked.
Phong Hong, I like your version if this peri-peri chicken.. First thing that comes to mind is also that fast food outlet.. Not cheap, 1 meal of quarter chicken with 2 sides and a drink cost RM20++.. I don't like the flavours at all but my colleagues are crazy over it.. I always stick to their herb and garlic sauce only..

DeleteI bought the bottled sauce and grilled my own - was all right but can't say it swept me off my feet. Bet yours with all your own fresh ingredients would be a whole lot nicer.

DeleteI guess I have a crocodile tongue and simple ate the peri-peri ayam at the outlets without much complaints. I always drenched it with their Flaming Hot Peri-Peri Sauce that killed all its original taste. After hearing and seeing your master piece, I believe that yours tasted 100% better and fragrant.

DeleteI like the one at the outlets, so I think I will fall in love with your peri-peri chicken instead! I think the difference is the sauce they use to marinade. You made the marinade fresh, they used the pre-made peri-peri hot sauce supplied by HQ. Mass produced marinade for sure cannot beat fresh ingredients.

Deleteit's been a while i went to that fast food chain for their peri-peri chicken already.. the chicken is way too small and most of the time, i go to another chain for their roast chicken because the chicken is bigger, hahahaha!! wait a second, are they considered as "fast food chain"?? anyway, mention about this peri-peri chicken chain, i actually love their side dishes..

Deleteof course i have never expected this to be something you ate in the fast food chain, and not surprising that you can't feel anything to their chicken, hahaha!! you pandai cooking mah, sure you can make something that suit your own taste and likely also taste even better.. at home we always use more "hoh liao" and very generous with ingredients, so i am not surprise your chicken is even better.. of course looking at the photo, we cannot tell since yours and theirs look quite the same, but only one bite can tell which is better huh?? and tell me, how many % of that chicken went into your stomach?? hehehe~~ :p

DeleteYou grilled the whole chicken....and then cut it up? It looks good but I never cook a whole chicken coz it'll be too much to eat + I don't know how to chop a chicken....hee...hee...so, I usually use already chopped up chicken.
ReplyDeleteYes, I did! I used kitchen scissors because I can't do it with a knife. Most of the time I prefer ready cut chicken pieces, mostly the leg.
