And a big one at that hee..hee..hee.. I think it is brilliant that you can bake just one cookie when the itchy mouth syndrome kicks in. I mean, you just want to have a munch, so why bake a whole batch?
You know, I've lost the mood for baking lately. I just don't feel like it. I don't know why. Maybe it's just a phase I'm going through. I'm OK with cooking though.
Just the thought of lining a cake pan and measuring out the ingredients dampen my mood. Weird, huh? But then, I still want my cookie and as for cakes, there is quite a stash in my freezer (sshhh....). Here look.
So. I googled for a recipe for just one cookie. I found a few and I settled on this one.
I must say that I am pretty happy because you just mix a bunch of ingredients, plonk the big ass piece of dough on a small baking pan and bake away.

In the recipe, you will see 2 tablespoons of butter. Of course I did not measure the butter using a tablespoon but I used these prepacked pats of butter. To soften the butter, I simply removed the pats of butter into my mixing bowl 15 minutes before I made the cookie.
You will also see one (I used two) tablespoons of egg. It's no big deal, just beat up an egg, take what you need and make omelette with the rest (keep in the fridge if not using immediately).
It's pretty cool I think to bake yourself just one big cookie. There's no hassle unlike baking a whole batch where you have to form small balls of dough and bake in a few batches. That is very tedious and tiring which explains why I haven't been baking cookies lately (until now).
Yeah, just like that and one giant cookie satisfied my cookie crave for the day.
One Giant Chocolate Chip Cookie
Recipe source : Adapted from Cooking Classy
Ingredients :
- 2 tbsp salted butter, softened (I used 2 small prepacked salted Ballantyne butter)
- 1 tbsp caster sugar
- 2 tbsp beaten egg
- 1/4 tsp vanilla extract
- 1/3 cup self-raising flour
- 1/4 cup chocolate chips, divided into two portions
Method :
1. In a mixing bowl, whisk the butter, sugar, beaten egg and vanilla extract.
2. Add flour and half of the chocolate chips and mix to combine.
3. Form the dough into a ball, place on a lined baking tray and flatten the dough.
4. Press the remaining chocolate chips onto the dough.
5. Bake for 15-22 minutes or until the cookie is browned (bake for a shorter time if you prefer softer chewy cookies. I like mine crispy and baked for 22 minutes).
6. Remove from oven and cool on a cooling rack.
Note : If you find the dough too dry or crumbly, add a bit more beaten egg.

This is one of my favourite cookies with lots of chocolate chips, i sure overeat while watching TV or surfing net, if there are many in front of me, greedy me hor, hehe...

DeleteWhen I saw the post title on my blog's side bar, I thought you might be writing about my Cookie...hehe *wink wink*...coz we know Phong Hong doesn't bake just one cookie...wakakakaka! :D By the way, you didn't tell us how big this cookie was....was it a 6-inch cookie? Hey, I think you've stumbled onto something good...baking just one cookie is less work and one doesn't have to overeat which is great. Hmmm, do frozen cakes taste dry?
ReplyDeletehee..hee..hee...I adore your Cookie and yes, PH usually eats many cookies! This cookie is approximately 4 inches. Frozen cakes are still moist, provided they are properly packed and sealed. I used freezer bags and I should put them in airtight boxes but heh, I just bung them in the freezer like that LOL!

DeleteI like to eat soft chewy cookies but store bought ones are too sweet for me. Wow you have so many frozen pieces of cake in your freezer. It must be a great feeling of freedom to be able to bake just one big cookie whenever you feel like it.
