When I was in secondary school, I wanted to become a rock star. I used to listen to AC/DC, Kiss, Judas Priest and Def Leppard full blast on my walkman (a now extinct device?). The Sony walkman was a gift from my uncle and to this day I am forever grateful to him. As I listened to the guitar riffs, I imagined myself playing lead guitar on stage. LOL!
I did mention my music preference and teenage dreams here and here. And coming back to present day, there is no way I could be a rockstar. I mean what rockstar goes to bed at 9:00pm right? LOL!
Anyway, before I get into this delicious Lemon Chia Seed Cake, let me digress a little. About 2 weeks ago, me and 9 other fellow bloggers received a personalized music CD from SK. This is not the first time that I received a gift from a fellow blogger.
There were 3 other occasions. The first was from Shannon of Just as Delish, the second from Yen of Eat Your Heart Out and third from Lok of Realgunners. Those were giveaways that depended on chance and I guess I got lucky :) But SK's is all about spamming power :D
We all love gifts don't we? So of course I was delighted when this CD with a Butterscotch Pecan Tart cover came together with a Chinese New Year Card. Very nice!
Best of all, I got to choose 10 songs that I like. In addition to that, I got 4 bonus tracks selected for me. Just in case you are curious, this is my track listing. As you can see, it is quite a mixed bag of choices. I like songs with a certain sound but I just can't describe what that is hah..hah...
For me this is one super awesome compilation which I enjoy listening to almost everyday. Yeah!
OK, back to cake. As I have mentioned before, I used to dislike the smell of lemony biscuits or cakes. But all that has changed since I started baking. And what can I say? I love this cake a lot. It is seriously good and I love the added crunch from the chia seeds. But I felt that there was not enough chia seeds so I guess I will add more in my next bake.
So I leave you now with the recipe while I go listen to my awesome CD!
Lemon Chia Seed Cake
Recipe source : Adapted from Aunty Young
Ingredients :
- 130g caster sugar
- 120g butter
- 3 eggs
- 180g milk
- 2 tsp vanilla extract
- 250g self-raising flour
- 2 tbsp chia seeds (I would add 3 tbsp next time)
- lemon zest from 1 lemon
Lemon glaze :
- 3 tbsp lemon juice
- 4 tbsp sugar
Method :
For the cake :
1. Beat butter and sugar until light and fluffy.
2. Add eggs one at a time, beating well after each addition.
3. Add milk and vanilla extract.
4. Fold in flour, lemon zest and chia seeds.
5. Pour batter into a lined loaf pan (I used 2 smaller loaf pans) and bake at 160C for 50 minutes or until skewer inserted into the center comes out clean.
6. Poke holes in the cake and brush with lemon glaze.
7. After about 10 minutes, unmould the cake.
8. While still warm, brush the cake with remaining lemon glaze.
Note : This cakes tastes better the next day!
For the lemon glaze :
- Mix the lemon juice and sugar and stir until sugar dissolves.

Amboi you listened to rock songs ga when you were young? I remembered when I was young, it was all about Brittney Spears, MLTR, Boyzone and Westlife, haha.. No rock rock one..

Louiz, I still listen to rock hee..hee.. I cannot stand those slow slow songs. Chia seeds is quite nice in this cake. Has a crunchy feel to it.

Deleteyeah, I was surprised to get that list from PH with all the rock songs!!! never expected that at all, and luckily those rock songs are "digestible" for me, at least not the heavy metal rock, haha!! so I also got a few of the rock songs I keep and put them into the CS as bonus tracks.. so this Rock-Star-Wannabe-Baking-Queen really turns on her music loud while baking?? no wonder all her cakes raise so well and look so beautifully delicious, because the rock songs stimulate them!!! hahahaha..

I like the zest of a lemon and thus fruit also smells good and refreshing.. chia seed, oh yeah, I would love that "poppy" texture when bite into the fluffy cake.. and lastly the cake looks so moist and buttery enough that I can wallop the whole block in a go.. can fight with Princess Ribbon woh!! xD

DeleteOoo...I love lemony cakes (in fact, I love anything lemon)...they smell so fragrant! Chia seeds and poppy seeds...are they interchangeable?
