Pinoy Chicken Barbecue


This is one of the recipes I bookmarked when I was looking for something to cook for the MFF Philippines event. As always, the chicken lover in me will jump at any roasted or barbecued chicken recipes. And this Pinoy barbecue recipe is no exception. There's always something so irresistible about roasted, grilled or barbecued chicken. Or is it just me?



Every time I walk past the food court at any shopping center, my eyes will always gravitate towards the roasted chicken. Especially the ones rotating on the rotisserie. And I keep making a mental note that my next oven must have that thing to "pusing-pusing" the chicken hah..hah...



The interesting thing about this recipe is that it uses banana ketchup. Huh? Banana ketchup? I did some googling and found out that banana ketchup is a popular condiment in the Philippines.



Apparently there was a shortage of tomatoes during World War II and some bright spark came up with the idea of using bananas as a substitute because bananas were plentiful. And up till today banana ketchup is more popular than tomato ketchup. Since banana ketchup is not available here, I used regular tomato ketchup.



I did not follow the recipe exactly, I mean who does right? I just "agak-agak" and made some changes. I left out the bird's eye chilli and used light soya sauce instead of salt. And being the Terengganu girl that I am, I like my marinades on the sweet side. Not too sweet as in sickly sweet but just a hint of sweetness. For that, I added 1 tablespoon of Maple Syrup.



The marinated chicken pieces are supposed to be skewered on bamboo sticks and grilled over hot charcoals. Obviously I don't have a charcoal grill and I used my trusty old oven. I quite like the BBQ chicken as the marinade has a good combination of tangy, salty, and sweet. I think my marinade could use a bit more tomato ketchup and I will make adjustments in my next BBQ.



It looks like I have made good use of my lemons and I still have a few more in the fridge. I guess you will be seeing a few more recipes with lemons coming your way.












Pinoy Chicken Barbecue
Recipe source : Adapted from Panlasang Pinoy Meaty Recipes
(My modifications in red)

Ingredients :
- 1kg chicken wings and thighs (I used 2 whole legs and 5 wings)
- bamboo barbecue sticks (I did not use these)

Marinade :
- 1/2 cup banana ketchup (I used about 1 cup tomato ketchup)
- 1/2 cup vinegar or lemon juice of calamansi juice (Lemon juice)
- 8 cloves garlic, crushed
- 2 medium sized red onion, minced
- 2 pieces bird's eye chilli chopped (I omitted)
- 1 tsp ground black pepper
- 1 tsp salt (I used 2 tbsp soy sauce)
- 1 tablespoon Maple Syrup (my addition)

Method :
1. Soak the barbecue sticks in water for half an hour and set aside (if using).
2. Mix together the vinegar.lemon juice, garlic, onion, salt/soya sauce, ketchup and pepper.
3. Add chicken to the marinade and mix well. Marinate for 1-3 hours. (I marinated overnight)
4. Drain the chicken and set aside the marinade.
5. Prepare the charcoal grill for grilling the chicken and grill them over hot charcoals turning on each side until all sides of the chicken is cooked. (I grilled the chicken in the oven at 200C for 40 minutes)
6. Wait for the skin to become reddish then baste with the marinade. (I basted every 10-15 minutes)
7. Continue until chicken if fully cooked.

  1. I scrolled straight to the ingredients when I see the word "roasted" chicken (although your title is barbecue).. I don't have a grill, just an oven.. But I think it should work the same.. The ingredients are simple, I have everything, except maple syrup.. I have honey though.. Hmm, apa tu banana ketchup? Ketchup made from bananas? Interesting.. But I think I'd prefer to stick with my Kimball tomato sauce, hehe..

    1. Hi Louiz! My oven has a grill function but got Grill 1 and Grill 2. I can't remember the difference and my oven manual also don't know put where. So I just use the roast/bake function and put at higher temperature.

      Can use honey. The reason I use Maple syrup is because I want to finish the bottle. Yah, banana ketchup is ketchup made from bananas. I never seen it before.

    1. Oh yes, pork leg! I've not tried the Pinoy one but had it at a Chinese restaurant. There were so many of us and each one could only sample a little bit :(

  4. yeah, I always think we don't have to follow exactly the recipe but would be more fun to improvise on what we have got in hand.. a little creation and experiment, and that would be more interesting, and probably you will surprise yourself when the food came out nicer than you have thought!! and that means you enhanced or improved it.. :)

    1. Normally I will try to follow but the amount used is just agak-agak. Quite hard lah to measure everything. In cooking it is quite OK but not so with baking cakes.

  5. I like this chicken, it looks so appetizing and the sauce looks just nice for the chicken as well as TWO bowls of rice, haha!! looks like you've been cooking a few pinoy style chicken dishes huh?? must be your partner who likes them a lot.. :)

    1. The colour turned out nice, hor? This one my partner haven't eaten but I will cook it for him. I usually do a trial run first. If nice then I cook for him. But sometimes, no time to do testing hee..hee.. So far, no complaints from him except if the food is too salty.

    I also cannot resist roasted chicken, every time I walk pass the rotisserie section of Jusco, it is a huge test of my mental endurance >.<

    1. Oh, really? That will be my next oven when this one konks off :) My partner once told me never to buy the roasted chicken at Jusco. He reckons that they use the chicken that are near or are already expired hah..hah...

    2. I never buy from Jusco too, same concern as your partner. It's just that when I always get the temptation to have roasted chicken when I saw it, if I cannot tahan then I will head to Nando's which is within 20 meters away :D

  9. Hi Phong Hong, another ho-liao roasted chicken from you. Friend, I have bookmarked so many of your roast chicken recipes. I'll do it one day, though. This one is so tempting. BTW, banana ketchup is much much cheaper than tomato ketchup in the Philippines. They have them in sachets too. I brought back some sachets. It seems that many couldn't afford tomato ketchup so they have banana ketchup as substitute.

    I am with you, when ever I saw barbecue or roasted chicken recipe I can't resist wanted to try too.
    This Pinoy chicken looks finger licking good. Must try to cook this soon....see I start again..hehe
    I don't have maple syrup, can I use honey instead?

  14. Tasty tasty chicken dish. I always eat chicken meat when I don't knoe what to eat. Would be interesting to get a bottle of banana ketchup to try. I wonder is it red or yellow sauce.

    1. Hi Jeannie! If you use a recipe from book or internet, then can just put the recipe up as a guide even if you yourself just agak-agak. Unless if own recipe then quite hard to write the recipe if agak-agak. Nanti other people try and then tak jadi , they will not be so happy hah..hah...

  23. Banana ketchup?! for the life of me, I have never heard of that. Must ask my philipino helper. Yes, roast chicken is always a good bet for any dinner. Totally family friendly food :)
