Chicken Salad with Kiwifruit


The power of advertising! Yesterday I read Sonia's post on the Zespri kiwifruit special session for bloggers and media. I quite enjoyed reading about the activities and had a good laugh at a photo of Quay Po attempting the pole (apologies Quay Po, I just couldn't help it :D).

Now, I am not much of a fruit person. I have to be coerced to eat some fruit. I admit that the only fruits that I actually buy and eat are pineapples and unripe mangoes which I use in  kerabu or rojak. I don't eat them as you normally eat fruits.

Somehow that kiwifruit post implanted something in my mind especially when I saw a photo of The Sweet Spot preparing the kiwifruit, glass noodle and chicken salad. It looked really delicious and I started craving for a salad with kiwifruit.


So when I went grocery shopping today, I saw the Zespri kiwifruits and promptly picked up a packet. I also bought my salad ingredients.

Chicken Salad with Kiwifruit

Ingredients :
- Steamed chicken, shredded
- Carrots, grated
- Cucumbers, sliced
- Cherry tomatoes, sliced
- Daikon, grated
- Kiwifruit, sliced
- Alfalfa sprouts
- Corriander

Dressing
- 1 clove garlic
- 6 white peppercorns
- pinch of salt
- 2 tablespoons red wine vinegar
- 1 tablespoon Balsamic vinegar
- 1 tablespoon soya sauce
- 1 teaspoon sesame oil
- 1 teaspoon honey
- 2 tablespoons extra virgin olive oil

Toasted sesame seeds to garnish

Method :
- pound garlic, peppercorns and salt
- add vinegars, soya sauce, honey, sesame and olive oil and mix to combine

Put chicken and vegetables in a bowl and toss with dressing. Sprinkle with sesame seeds.

  2. Good for you....you must take fruits regularly! Kiwi fruits is very high in Vitamin C and much more better then orange! This is really yummy, got chicken, got vege and fruits too, what could I ask more???

  3. Hi PH, I like this salad very much. Why? You have almost everything for a complete light meal and the sweet sour taste is definitely very appetising. I also like your way of writing recipes, agak-agak only and leave them to imagination.

  4. The salad looks great especially with the addition of sesame seeds. I actually like salad with some fruits in it. It gives the salad a bit of sweetness.

  10. i havnt gone in to read abt their kiwi affairs :) but sure this salad sounds appetising. i love kiwi, i also put them in my sandwiches sometimes.

  13. Oh my, this chicken and kiwi salad looks really, really delicious. I especially like the recipe for the dressing. So much flavor! I could eat bowls and bowls of a salad like this and never get tired of it.

  20. I have never eat kiwi in its savoury form and this chicken salad with kiwi is totally new to me. I suppose kiwi has enzymes to tenderize the chicken and can be nice and tangy in salad... this sounds delicious to me :D
