Roasted Spicy Chicken Wings


I was poking around my pantry the other day and I came across three packets of fish curry powder. I am making a conscious effort not to waste cooking ingredients and I don't know what possessed me to stock up on fish curry powder.


I confess that I am not a fan of fish curry. I prefer chicken or better still, mutton. The people in my family especially the boys - my father and my two brothers love fish curry. If I remember correctly, grandpa was also a fan.


I wasn't about to launch into an experiment with fish curry and the best thing to do was to work with something I am more comfortable with - chicken wings. 


I remembered a recipe that married curry powder, fish sauce, honey and lemongrass. It was an odd combination which worked pretty well and resulted in a very tasty Grilled Lemongrass Prawns. I reckon that it would work well with chicken though that tanked when I made Chicken Kebabs.


I had two packets of chicken wings which I defrosted overnight in the fridge. Usually I would leave the wings whole but this time, I removed the tips and separated the mid-wings from the drummets. I have taken a liking to mid-wings due to Diana's influence hah..hah...  


The chicken wings turned out very well except that I put too much curry powder. Two tablespoons should suffice but I dumped the whole 25g packet (about 3 tablespoons?) because I did not want any leftover curry powder. 


To complement the wings, I made a simple pineapple salsa. I just cut up two slices of pineapple and added sliced onions and mint. Then I mixed it all up with lime juice, fish sauce and Thai chilli sauce. 


I was very pleased with chicken wings and I finished the whole lot, no not in one sitting, but had them for lunch and dinner. They went really well with the pineapple salsa. Now I have to think of what to do with the other two packets of fish curry powder. And hopefully, I do something with fish hah..hah...











Roasted Spicy Chicken Wings

Ingredients
- 10 chicken wings, separate mid-wings and drummets and discard tips

Marinade :
- 2 tbsp chopped lemongrass
- 1 tbsp olive oil
- 2 tbsp honey
- 3 tbsp fish sauce
- 2 tbsp curry powder

Method :
1. Combine all marinade ingredients and marinate chicken wings for 2 hours or overnight
2. Arrange chicken wings in a single layer on a lined baking tray and roast at 180C for 35-40 minutes, turning every 10 minutes until the wings are cooked and nicely browned.

  2. I am also not a fan of fish curry, nor mutton too, give me chicken beef or best still pork curry, I would be happy, hehe!!

    but this chicken wings coated with fish curry powder, eih, seems nice lah.. so you can taste fish in the chicken and also chicken in the fish?? muahaha, just kidding, I think fish curry powder does not taste like fish but just spices for fish unless you really cook it with fish.. common sense I have lah, so don't scold me for just tau makan, wakakaka!!!

    back to your chicken wings, this one I like!! I mean comparing to drumstick and thigh or the whole leg, I actually prefer the upper part of a chicken, so breast or wings!! and wings lagi terror because I can wallop a lot before I can even realised (breast too much of meat so likely one or two will stop me).. ooopss, sound like Princess DBKL Ribbon huh?? the skin looks so inviting leh I must tell you, I mean the color just makes me wanna bite into them!!

    and you have pineapple salsa to go with it, yes!! that would go well with the chicken, pineapple and what you added in sounds very refreshing as well as reducing the greasiness so one can eat even more!!! sinful sinful, but I like!!! haha..

    don't know what to do with the curry powder?? make this chicken wings again, haha, then I wonder how many wings you need and how long it will take you to finish that?? or maybe just have a giveaway to your fellow readers!! kekeke~~ :p

    1. SK, hah,,hah,,ya lah, make more of these wings, hor? I think I shall do that :) I'm looking for other things to do with the curry powder lah. Eh, how come I have never cooked pork curry before? That needs to be explored!

  3. If only chicken wings, not enough.. I can eat 30! Yep 30! I bought and made wings before, so I know.. Uncle chicken would usually cut the wings into two parts, but I only love the wing part, not the drumstick part, so if wings only ahh, 30 is sap sap sui lor, hehe..
    A very delicious way for you to use up your curry fish powder.. Reminds me of curry powder, still as good, ayam goreng berempah, with curry powder, kunyit, yummmzzz...

  11. Again, I'm so jealous that your chicken wings are evenly browned (but then I realised you keep turning them...I don't do that once it's in the oven, I'm too lazy) ;D And yes, my favourite part is the wingette too! This looks like a simple enough recipe and I do like pineapple salsa.

    1. To get it browned, you must turn them often. Yeah, I know. It's quite a drag to open the oven every now and then. But you need to do that until most or all of the pan juices dry up. Worth the effort!

    I love chicken wings .... even the tips...
    Oh occasionally I would use chicken curry powder to marinate chicken pieces and coat with batter then deep fried. But oily lor ...

    1. Mun, no they don't taste like fish hah..hah... Fish curry powder does not have fish taste. The spice mix is slightly different from meat curry powder. But all the same, it's still good if used for meat :)

  17. Chicken wings are my most favourite part of the chicken, from the wing tip (to chew), the middle (soft meat and tasty skin!), and the top (the meatiest)! I could finish half a dozen (if not more!) of your roasted wings...with curry seasoning some more! Yums! Looks delicious and that pineapple salsa sounds good!

  22. What a clever chef you are! You could always cook something out of nothing and survive in jungles too! I was thinking why my head had to always think that curry fish powder must cook only fishes? Next time I do my grocery, I will change my mindset.
