Corn Fried Rice


Last Wednesday, I was caught in very heavy rain. It was almost 5pm when I had to go to Citylink to courier a document to a client in Penang. Citylink is within walking distance from my office. Before I went out, I took a peep out my office window and realised that the sky was getting dark. It looked like it was going to rain. I brought my umbrella along as my Uncle once told me "If you bring your umbrella, it won't rain. But if you don't, it will."



I quickly made my way to the courier company and had to walk past the construction site. Ugh! Messy, messy and it was quiet difficult to cross the road. And to make things worse, I stepped on something and it poked right through my slippers. Ouch! But luckily I was not hurt. I made a mental note not to pass by there again which meant that I had to go back to office the longer way.



Once I settled the document, I made my way back. As I reached the shophouse on the other side, the rain came pouring down. So much for my Uncle's advise, this time it did rain. And the rain was relentless, with strong winds, thunder and lightning. I had no choice but to wait for the rain to hopefully stop. No point walking in the storm as my umbrella would be of little help.



I walked a little bit further up the shophouse and stood outside a coffee shop. There were a few stalls that were already starting their evening business. I happened to stand quite close to a stall selling fried rice and noodles. I always love observing the hawkers in action in particular how they flip their frying pan to toss the fried rice. I don't even have the strength to lift my wok with one hand hah! hah! 


The hawker was already taking orders for fried rice and I watched him as his assistant helped him by portioning out the rice. The fried rice smelt good, lots of "wok hei" aroma and I was very tempted to "tapau" a packet home. But just as well I didn't as it would have got wet on my way back to office. It was already past 6:00pm and the rain just went on and on. I had no choice but to brave the rain with my rickety umbrella. Wow, the wind was very strong and my umbrella couldn't protect me from the rain. I was drenched. I had to make a few stops along the way as the rain got heavier. I saw a lady whose umbrella flipped due to the strong wind.

Anyway, I managed to make my way back to office safely, but all drenched. My partner was very concerned about me as I had just recovered from the flu. When we got home he made sure that I quickly changed into dry clothes.



Well, since I missed the fried rice I decided why not fry some myself? I had an ear of corn in the fridge, it would be a great addition to the fried rice. I also had some homemade roasted pork (recipe to share later) in the freezer. I made the fried rice during the weekend of course, as I don't have time to cook on weekdays. And how did it turn out? I loved it but of course I can't beat the hawker or restaurant fried rice as it was very much missing the "wok hei" aroma. I can't jolly well turn up the fire at maximum volume and start flipping the pan - I'll make a huge mess and worse, burn down the kitchen. Can't have that happening hah! hah!

I'm not putting down the measurements for the ingredients as I pretty much chuck stuff into my wok. Most of you are better cooks than I am and you can easily figure out how much of the ingredients to use.

Corn Fried Rice
Recipe source : Phong Hong

Ingredients :
- Cooked rice, preferably overnight rice
- Roasted meat, diced
- Prawns, shelled and deveined
- Fresh corn kernels
- Long beans, finely sliced
- Onions, finely minced
- Garlic, finely minced
- Cooking oil for frying

Seasoning :
- Light soya sauce
- Dark soya sauce
- A little bit of sesame oil
- A good dash of pepper

Method :
1. Heat oil in wok.
2. Saute onions until translucent and add garlic.
3. Continue to saute until garlic is slightly browned.
4. Add prawns and fry until prawn changes colour.
5. Add diced roasted meat and corn. Stir to mix.
6. Add cooked rice and stir fry, making sure the rice grains separate and are well mixed with other ingredients.
7. Add seasoning. Stir the ingredients to evenly distribute the seasoning.
8. Add long beans, continue to fry until rice grains are fairly dry and heated through.

    udang tu betul jahat lah! adoiii...macam nak kena langgar janji lagi jer ni...tapi perut buncit I takyah bawak check doktor, cukup time terus masuk to***t!

    1. Q, I dulu bersumpah tak nak makan nasi sebab nak kurangkan berat badan. Tapi blogging punya pasal, I terpaksa pecah sumpah. Hahhh..itu lah cerita, diet dah tertinggal. Makan dulu, yang lain belakang kira hee..hee...

  3. Hi Phong Hong, I loved frying rice with these ingredients, so easy yet yummylicious...I can go with more than a plate. My friend, how to eat out lah???? Unless you don't mind forking the $$$$

    1. Kimmy, you are right. Too expensive to eat out and sometimes the cooking is not that good. Last week I tapau a Fried Beef Koay Teow and the portion size is so small. Only 5 tiny pieces of beef and it cost me RM6.50. And it wasn't even good.

    2. Hi PH, we were at the food court, I ordered Japanese Teppan Chicken Rice. Menu looks so attractive and portion was supposed to be enough for a lady. My hubby was smart, he says 'let's wait for it to come before I order mine'. We were so disappointed with the portion [1 scoop of rice, 1 tbsp cabbage/mayo, 2 slices of zuchini and a piece of boneless chicken with a thick coat of flour]. It was priced at RM8/-. Tat boh tat?

    3. That's what I say "tuah boh tat"! Sure "chiak boh pah" and for that price "thun beh lok". Sometimes the picture on the menu is very misleading. I already given up hope eating at food courts. But sometimes no choice have to eat out :(

  4. Ooooo......look at that corn kernels on your fried rice! Fried rice is the easy meal if we are in a hurry to cook a meal or in a dilemma what to cook and instead choosing fried rice is the most smart way, right? Adui......purposely put that big prawns on top just to tempt all your visitors! My mouth watery now......

    1. Joyce, I was quite surprised my fried rice turned out quite well. I haven't had fried rice for a while and I ate more than my fair share. So you see, the low carb diet has been abandoned whahahhaha!!!

  6. It is always good to sediakan payung sebelum hujan as you know our Malaysia weather. It normally rain in the evening. I actually miss our tropical rain. The rain here is nothing compare to the one back home. Can't use the terms pouring like cats and dogs here ha ha...What a beautiful bowl of fried rice. I am eying the big succulent prawns :)

    1. Gertrude, I like rain especially in the evening when I am already in bed but not when I am outside hah! hah! I used to enjoy the monsoon rain in Terengganu when I was young. But when it rains in the early hours of morning, I wish I could sleep and need not wake up so early :)

    1. Mich, fried rice is one of my favourite dishes. I particularly love the Chinese fried rice in restaurants. Can't replicate that special aroma at home.

  8. When I have no idea what to prepare for meal, fried rice is always the best options...even with just egg fried rice will do..hehe..

  19. Phong Hong, your fried rice looks very "ho jiak!" Sometimes when I'm lazy to cook, I will do fried rice, just dump anything that I can find from the fridge, hehe! OK, now, is it too late to have a bowl of your fried rice with 1 big prawns & lots of sweet corns there?

  20. Hehe jika bawa payung tak hujan ya:) satu petua yg bagus.petua my hubby pulak jika tak ada angin walau pun nampak nk hujan ....tak akan hujan tp petua tu selalu tk boleh pakai hikhik.

    Argggh...tk dpt kerap posting masak masak kerana kesibukan yg melampau.Psttt jaga cucu ma ;).....oh ya nasi goreng tu sungguh menarik.

  21. Hi PH! I love the size of the prawns in your fried rice! Come to think about it, I have not had fried rice at home for a while as wife doesn't like rice as source of carbo... this post is triggering me to wok fry the rice again!

  22. Phong Hong, I absolutely adore your corn-fried rice with the shrimp...totally salivating, and craving it. Rice and shrimp are my all-time favorites and to make it even more special is to stir-fry it with yummy veggies! I also love your 'budu'...such a cute name for the spicy and colorful soup, and oh, that amazing grilled fish; yumm! Your making me so hungry; wish I could join you for one of your fabulous meals! xo

    1. Elisabeth, I have a weakness for fried rice. It is delicious and so comforting. I shall be making more grilled fish because it goes so well with the "budu". But I doubt if you will like "budu"" it as it really smells :)

    A real cook like you wouldn't need any measurement. Your agak agak is always working well but me always disastrous with proper measurement :p

    You are such a poor thing being caught up in the rain. Let's look at the brighter side... Nice that you are well inspired because of this pouring rain.
