I did not have dinner the evening before, hence me feeling so peckish in the morning.
Now, there are good carb meals and not so good carb meals (by my definition) where the good (or better) one contains low or moderate amount of carbs matched with a good serving of proteins, fats and veggies.
There's protein (scrambled eggs), good fats (avocados), carbs (sourdough bread) and veggies (salad greens and walnuts).
As what I usually do. I eat the proteins/fats/veggies first.
Leaving the sourdough toast to be enjoyed last. So good! I did not use the small container of balsamic glaze (which is terribly sweet). The balsamic dressing on the salad however was very well balanced.

DeleteWhy no salad? Now that you're eating veggies again. Based on the dish you had, I don't think there's any (possible) replacement for not wanting the veggies. There's no creamy dressing, just balsamic vinegar, so it's good (especially the walnuts), no?
