How I Spent My Christmas
I don't celebrate Christmas, hence the lack of frantic preparations and festivities. All that I looked forwards to is spending the day at home. I am one of those terribly boring people who does not like to go out. I am happy hanging around at home in my tee shirt and sarong watching exercise videos while munching on keropok or cookies. I'm pretty low maintenance and my partner does not have to worry about taking me on exotic getaways or think of ways to keep me amused during the holiday season. So what did I do on Christmas day?

Tomato Rice (Bastardised Version)
There is a craze in recent times and it's Tomato Rice. I saw one or two recipes here and here. Then I went to watch it on Ochikeron. The recipe is a simple one, just rice, tomato, salt, pepper and olive oil. This cute Japanese girl was raving over it as she ate the Tomato Rice. I am sorry darling, my tongue long corrupted by the likes of sambal belacan, budu and fish sauce, is unrepentant and therefore cannot comprehend your enthusiasm.

When SK showed me this very obscene photo I got so excited I wanted to bake what I saw immediately. Yeah, immediately as in NOW, SEKARANG, TONG KIM! If I knew the Tamil word for "now", I would say it out loud too.

Nutella Chocolate Chunk Cookies
Moving on with my stock clearance exercise, it is a really great excuse to bake some cookies! This time it is Nutella. Two bottles of it with bits of hazelnut chocolaty goodness sticking at the bottom and sides. Do you know what expired Nutella smells like?

Southwest Cowboy Chili
When I was a little girl, I used to sit by my grandma and watch westerns like Bonanza, How The West Was Won and The High Chaparral. My grandma has a thing for cowboys. Cowboy songs, cowboy TV shows and anything cowboy. I don't know why. She referred to all those cowboy series as "cowboy phor" (cowboy story in Hokkien). So I guess I had a good dose of cowboys (and the occasional Red Indians) when I was growing up.

My Stingy Chili Plant
I have not had much luck with chilies in my garden. Flower buds appear, bloom and then drop off. Even when the fruit begins to form, it is aborted shortly after.

Salsa Roja Asada
Do you like salsa? I love it a lot! The first time I fell in love with salsa was when I had it at my brother's house. I have another brother and this one loves to cook. A few years ago, he cooked a Mexican themed lunch when my parents came for a holiday.

Rustic Apple Cake
After baking Blueberry Cheesecake, I had half a tub of sour cream left. And 5 apples in the fridge, 4 red and 1 green. A few days before that, Wendy posted her Rustic Apple Cake which she adapted from Simply Anne's. I thought the cake looked lovely and I just had to bake it.

It is now the final month of the year. How time flies! Soon it will be 2015 and that time of year again for new year resolutions. I am not in the habit of making resolutions but for 2015 I think I may have a few. "I will eat less carbohydrates" is not of them though hee..hee..

Pumpkin and Carrot Muffins
Just the other day I received an update from Nom Nom Paleo and I saw these gorgeous Paleo Pumpkin and Carrot Muffins. They looked really good to me. I was quite interested to sample a paleo version of muffins but alas, I can't get two ingredients namely almond flour and almond butter. Is almond flour the same as ground almonds?

Chocolate Buttermilk Cupcakes
When I say these cupcakes are good, I mean SERIOUSLY good! The best part is you don't need a cake mixer to prepare the batter. This Chocolate Buttermilk cake has a very special place in my heart because it was the first ever chocolate cake that I baked when I started baking two years ago.

Apple, Bacon and Pecan Salad
I had three strips of streaky bacon leftover after cooking fried rice for my partner. I thought of making something naughty but just three strips is not enough. And just my luck, bacon was totally sold out at the Pearl Pork outlet at Aeon. Sold out, imagine that. It looks like nobody cares about their arteries anymore.

Kay Hong Version 2.0 (Terengganu Braised Chicken Version 2.0)
OK. Confession time. A few years ago in the midst of preparing to cook Kay Hong, I realised to my horror that there was barely half a tablespoon of taucheow (beanpaste) left in the bottle. Yaarrghh!!!! The pork belly, chicken and other ingredients were all ready including the prized hard boiled eggs.

Apple Cranberry and Raisin Cake
Last week I baked Apple Apricot Cake again for my Mum to sample. Mum was so enamored by the cake that she requested me to bake the cake for her to take home to Terengganu. Of course I happily obliged. But I only had about 50g of dried apricots left from the bake and being the stingy person that I am, I was reluctant to buy another batch hah..hah...

Sour Cream Banana Cake
This recipe comes from Minty's Kitchen. I have to agree with Veronica that this is a very good banana cake. It is very moist and tender, the ultimate recipe for a banana cake lover. Whenever I find myself with an abundance of ripe bananas, I turn to this recipe.

Apple Apricot Cake
Last month I stocked up on apples to support the LTU Apple event. But I only managed one submission which was Apple Cinnamon Cheesecake. Before the month ended, I was struck with dengue and my plans for the apples went out the window. Luckily, these green apples keep very well.

Pumpkin Pecan Cake
The recipe for this cake comes from the book Lovely Butter Cakes by Amy Wong and KS Lee. However, the cake does not contain any butter but uses corn oil instead. Butter is applied only on the surface of the cake together with icing sugar and orange essence. It is an easy cake to make as it only involves the simple mixing of wet to dry ingredients, pretty much like making muffins.

Chocolate Banana Cake
After baking Chocolate Orange Ring Cake, I decided to try another recipe from the book Easy Chocolate. The Chocolate Banana Cake looked very pretty with streaks of melted white chocolate on top and a sprinkling of whole pecans. As they say, don't judge a book by its cover. Or in this case, don't judge a cake by its photo.

A Farewell Lunch at Chicago
Last weekend, my brother and I took our Auntie to Chicago. My Auntie was flying home and we wanted to give her a farewell lunch. Initially, we thought of Japanese or Indian but my Auntie had tummy upset the day before. Since she was flying off that evening itself, we reckon that she should eat something that won't aggravate her tummy. Raw fish and spicy curry was out of the question.
