Yes, I have made this before but I did not put up a recipe because it was kind of experimental at the time. Since I loved it so much, I had to make it again.
It so happened that I had some buttermilk leftover from making a cake. So this was perfect timing.
The best part was this time I made Ranch dressing and ooohhh...it was so heavenly eating the nuggets dipped in this tasty tangy dip.
Feeling a little guilty from eating all that oily greasy deliciousness? Make a salad.
And dress it up with some Ranch dressing and you are good to go.
The original recipe calls for a fresh cup of buttermilk to dip the nuggets before coating with another layer of flour. But I had exhausted the whole carton by making Ranch dressing. So the solution was to use back the soaking liquids, which led to no waste.
Double Dipped Buttermilk Chicken Nuggets

Ingredients :
For the chicken :
- 700g chicken breasts
- 1 cup buttermilk
- 1/4 cup pickle juice (optional)
- 1 tbsp Cajun seasoning
- 1 tbsp Cajun seasoning
For flour :
- 1.5 cups flour
- 1 tbsp Cajun seasoning (or any of your favorite seasoning)
- 1 tsp black pepper
- 1 tsp salt (taste the Cajun seasoning or any seasoning first to see if you need additional salt)
Method :
1. In a freezer bag (or a container) place chicken breast, buttermilk, pickle juice and seasoning to brine overnight or for a few hours.
2. When ready to cook, take the chicken breasts out of the liquids (do not throw liquids away) and cut into bite size pieces (bring to room temperature before frying).
3. Mix all ingredients for the flour.
4. Get ready two metal racks, one for placing your flour dipped chicken and another for draining after frying.
5. Dip each nugget into the flour to coat and shake off excess flour, Place on rack.
6. Once all done, dip the nugget into the reserved liquids, and dip again into the flour. Place on rack.
7. Once all done, heat oil fry the nuggets in batches until golden brown and crispy.
8. Serve immediately.

Looks good doing own nuggets instead of buying those processed ones sold outside. Used to buy those packet ones when my kids were very young.. homecooked ones are always healthier... by the way, is buttermilk er.. fresh milk?
ReplyDeleteButtermilk is a western product, mostly. Originally the by product from making cultured butter, it is milk with clattering cultures added... sour and rather thick. You CAN make something similar by mixing regular milk with neutral vinegar (rice or distilled) but it won't give you the same flavor. Unflavored and unsweetened kefirs can be substituted as well... that will give you closer to the right flavor, and tenderorize the nuggests.

ReplyDeleteThere is a recipe that uses ground almonds in place of flour. As I understand it, coconut flour can also be used. Can get that from the organic shops.

DeleteI actually use the bringing buttermilk for the coating as well.... but, since soo many people get all weirded about raw chicken, I opted to say fresh milk. As always, they look great!

Mushroom soup wouldn't give you the same thing. If you're trying to keep it halal, try substituting berbere spice.. it will give you an approximate spiciness to the nuggets
