Coffee Walnut Chocolate Chip Cookies


This cookie had me jumping up and down when I tasted the first one that came out of the oven. It's not just the coffee making me hyper but the whole combination of coffee and chocolate that simply rocks.

The walnuts? They complimented the other two flavors nicely with their nutty crunch. I used the Nescafe 3-in-1 coffee mix in the batter and it worked really well.

You know, I regret not baking this earlier for my parents. They are fans of Nescafe 3-in-1 and I bet they would love this cookie a lot. I'll be sure to bake some for them on their next visit.


It's funny that I never liked coffee flavored bakes/ice cream/desserts in the past even though I love coffee. 

I cannot function without my coffee. I drink coffee every morning and if I miss it, I will be a very cranky auntie. Not only that, I feel sluggish and I have no mood for anything.


I enjoyed these coffee cookies A LOT! I baked two versions of these cookies - crunchy and chewy. Although I generally prefer crunchy cookies, somehow I liked the softer and chewier version. In fact they tasted even better the following day.

I kept some for myself and the rest I gave away. I cannot eat all the cookies and grow fat all by myself, can I? I am sure there is a commandment  somewhere that says thou shalt not grow fat alone. Share thy cookies!









Coffee Walnut Chocolate Chip Cookies
Recipe source : Phong Hong 

Ingredients :
- 300g self-raising flour
- 250g butter
- 1 egg
- 1/2 cup caster sugar
- 1 tsp vanilla extract
- 2 sachets Nescafe 3 in 1
- 1 cup chocolate chips
- 120g walnuts, broken into small pieces

Method :

Method :
1. Cream butter and sugar until light and fluffy
2. Add egg, vanilla extract and Nescafe 3 in 1 and continue to cream the butter mixture until evenly mixed.
3. Add chocolate chips and walnuts and continue to mix.
4. Add flour and mix until to form a dough.
5. Using two teaspoons, scoop cookies dough onto lines baking trays and bake for 16 minutes at 160C or until cookies are evenly browned.
6. Cool on cooling rack and store when completely cool.

Notes for my own reference :
1. The first batch was baked for 16 minutes, tray rotated after half time.
2. The second batch onward were baked for 15 minutes (because the oven was hotter), tray rotated after 8 minutes.
3. For the softer and chewy version, bake for  12 minutes and rotate tray at half time.

Me terbalik with you, I don't drink coffee, but when the coffee is in ice cream or cookies, I like.. Wah, this one, I want to finish all.. I see also I "taan hau sui" now..

    1. You are macam SK, don't drink coffee but like coffee flavored stuff. This cookie is convenient to make, just campak the coffee mix into the batter.

I need some jumping now.. let my legs grow stronger... now standing on my heels already as part of the exercise... hahahaa... Yes, my sis is like you.. if no coffee, cranky auntie is her too... hahahaha... Thou shall share the cookies, I like that commandment...!

  5. I see you're on a cookie run....three cookies in one month?! I'm like you, I can't do with a morning cup of coffee. If I miss it, I have "withdrawal symptoms"...like junkies...haha! :D Okay-lah, not so serious, but the whole day seems "off" to me. So, if you cookies have coffee in them, I'll sure like them :)

  6. I prefer chewy cookies so 12mins baking time only. I seldom drink coffee but I will eat coffee cookies anytime. In fact I like almost all cookies except those with m&m candies in them.

  9. i am totally opposite!!! you love (and cannot live without) coffee but dislike any other things made of coffee, i do not like (and can live without) coffee but like things made of coffee!! hahaha.. just that little hint of the aroma of coffee in biscuits and cakes and cookies actually taste nice to me.. but of course i won't be able to differentiate between a Nescafe 3-in-1 and expensive civet coffee beans, oooh, pathetic!! one day kena cheated also i won't know.. :)

  10. wah.. this cookie is triple loaded!! COFFEE and CHOC CHIPS and WALNUT, hoh seh!!! yes, i actually love nuts and choc chips in cookies, but many commercial cookies sold outside comes in either one, and for those affordable to me, can't even think of having them two together.. and now you have both nuts and choc chips and you also put in coffee.. OMG, i can imagine that i wallop the whole jar of cookies all in one sitting!! hahahaha, this thing i can give you high five, we are most alike!! :D

    1. The combination of 3 to me is fantastic especially how the coffee and chocolate blend together. My whole house smelt of coffee, so nice. I think I should put more nuts next time.

  11. no problem haven't not baked this for your parents earlier.. you can always take time to enhance your recipe and when it's time to meet them up later, you will have the perfect one for them.. i wonder if you parents actually like cookies, i mean you know, some elderly actually don't like cookies at all, probably because it's very "ang moh" and they do not like the butter smell.. rest assured when you hand your parents your coffee cookies (and with whatever extra in it), they will prove you that you are really their biological kid - wallop the whole jar in one setting!!! muahahahaha~~

    2. You made me laugh out loud leh! Luckily I wasn't drinking coffee or else sure tersembur all over the PC and my desk.

      My parents do enjoy cookies but in moderation lah. My mum used to complain about butter smell but so far with my bakes, no complaints. Those were most likely bakes using butter that is not so fresh, that's why got strong smell. Good butter is actually fragrant.

      hah..hah...that part about walloping whole jar is quite true of me :D

    3. I think your mother may be referring to the fake butter taste. I think they use artificial butter flavouring/essence instead of real butter so I call them fake butter taste. I really dislike those fake butter taste.

  13. Hi, may I know if it is possible to use instant expresso coffee powder instead? If yes, what is the quantity? To mix with how much hot water? Thank you.

    1. Hi Lorrine! I am sure you can use instant expresso powder but since I have not tried it, I have no idea how much to use. If mixing with hot water, I suggest using just enough to make it into a paste.

      Maybe you can trial and error. Start with two teaspoons of expresso powder and then gauge if the coffee aroma is strong enough. Good luck!

    2. Hihi, thanks for your advice. I just looked at your recipe again, you did not melt the three-in-one coffee in anything so maybe I will try just using two teaspoons of instant expresso powder.

  16. Your post title had me on full attention. I love and drink coffee but has now been weaned. Now I no longer addicted to coffee. Lol! I like your version of the commandment says "thou shalt not grow fat alone. Share thy cookies!" Wishing I am your neighbour. Ha ha!
