My Korean Inspired Rice Bowl

Last Sunday I did not go grocery shopping because 1 Utama mall was closed due to the discovery of four Covid-19 cases at its premises. It is very scary that the number of Covid-19 cases have escalated in recent times.

We must all take precaution and not let our guard down. Let's hope that with our collective effort we can once again bring the infection rates down and flatten the curve.

My partner and I did our grocery shopping on Saturday (when we got the news) evening at Jaya Grocer, The Starling. Luckily the supermarket was not crowded and we could shop comfortably.

I try not to go out unnecessarily so I bring food from home. I am also keeping my meals simple. I just need to cook rice, one major protein and as for vegetables, I rely on kimchi that I made earlier.

It is so convenient, right?

For additional protein, I can cook some eggs. Fancy eggs.

These are Mayak Eggs, marinated eggs, something like ramen eggs. Very easy to do.

So this is my Sunday rice bowl, made using whatever that is leftover after I make my meal prep.

That looks good to me, a bit of everything in my bowl.

For my weekday dinners, something simple would be a salad or even a soup like this one I made last week.

But even simpler is overnight oats. Now who says you can't eat oats for lunch or dinner, eh? My makan, my sukak heh..heh... I happen to love overnight oats and that's what I eat for lunch or sometimes, dinner. I top them with granola and roasted almonds. Very filling and wholesome.

I can't wait to eat lunch hah..hah...

  1. Korean. Hmmmm!!! Been asking my girl to go to the very nice Korean place here but she doesn't want as she knows I do not like most of the things on their menu. :P

  3. Luckily you didn't do grocery shopping at 1 Utama during the period in question, otherwise you'd be joining the hoards of people getting tested. Of late, positive cases have been found in quite a few shopping malls (scary!)...the latest being BSC. That'll turn people off from visiting shopping malls for sure. I've actually been to only one shopping mall (since the MCO) only once...and that's Pavilion (for my birthday). I've not even visited Aeon...I just make quick stops at my neighbourhood shops & wet market to get whatever I need. I'm proud that I can be so disciplined...haha! ;D

Your mayak eggs should be called manyak eggs...lol! Can they keep over a prolonged period of time (for you to consume over say 5 days) since I see them steeping in liquid? Even your simple Korean rice bowl has so many varieties, so you won't be fed-up eating the same thing. I also rely on salads & soups for some of my meals. That soup of yours, the first portion must have been eaten on the day it was made (haha!) coz I know reheated soups from frozen state won't look anything like that (that's why I don't freeze soups or is it you freeze only the soup stock?).

    1. Thank God! Even Tesco Mutiara Damansara was not spared. This is really scary. Dear Covid-19, please don't come to The Starling wahahahaha!!

The eggs apparently can keep for about 5 days. The suggestion is to remove them from the liquid after a day or two because it gets saltier as time goes by. You are right that the soup was fresh from the pot. I keep it in the fridge for 4 days and reheat before consuming.

  5. Wah!!! CMCO is back and more scary now as 1-U is so close to both our homes.

Hey I must say thanks for sharing that mango can be added to KimChi. I will definitely hop over to Hero Market to buy a few later.

    1. Yah, so scary! Luckily I was not there during that period. Looks like no shopping there for a while.

Eat the mango kimchi as soon as it is freshly made. Sedap!

    1. You might not like overnight oats if you don't like cold food.
