Eggs Baked in Avocado


My love for avocado continues and this time I revisited something I attempted many years ago. That attempt was not so successful because part of the yolk overcooked. After that attempt, I did not bother trying again until recently.

I experienced the same problem where the top part of the yolks cooked till solid. So I devised another method whereby I tented the egg filled avocado halves so that the eggs were not exposed to direct heat.


It takes quite a while for the whites to set and for the last 5 minutes, I removed the tent. The whites set nicely but the top bit of the yolks were slightly set.

I am still perfecting the technique and I will document it when I get it right.


The practical issues I experienced when making these baked eggs in avocado are as follows :

1. You have to scoop our some of the avocado flesh to accommodate the egg. Even then, you can't get all the whites in unless if the avocado is quite a big one and you use smaller eggs.

2. To make sure that the avocado halves are propped up, you need a baking dish that is of the right size so that the avocado halves don't tilt and spill the egg.

3. Baking time is quite tricky as I find that the yolks cook faster than the whites, hence I tented my baking dish.

I won't mind a few more experiments because this is so delicious. Runny yolks eaten with creamy yummy avocado is the ultimate breakfast indulgence for me.

  1. I just saw an Insta video on how to do this on the weekend. You beat me to doing it! Where do you find good avocadoes? I've had bad luck with consistency here.

    1. I git mine from Jaya Grocer. This batch is quite good at RM5.90 per fruit. It's Haas.

  2. I've stopped buying already because these days, they would be brown/rotten inside...and they do not come cheap! Dunno which country these cheaper ones are from, around RM6 each. The Australian ones before, around RM10 each were all right...but these days, the sellers will lie through their teeth - they will tell you they're from Australia even when they are not. :(

    1. The Hass brand is good. I tried Dole and I won't buy it again. This batch is Haas at RM5.90 per fruit and it was very good.

  3. Oh my! I never thought of egg in avocado. This recipe is interesting. Look like you have master the right technique in cooking the yolk. I wonder I can do it well.

  8. Wow! My wife would love this and she would kiss me if i baked them for her! She is my Avocado Queen whereas I don't really fancy this fruit. She love to drink Avocado Juice which is so slimy and geli to swallow. Weirdos!

    How did you tent the fruit & eggs? You didn't share this kung fu in your photos. Now you gave me an idea that I could try & steam all the avocado fruits with eggs inside. In Thailand, they steamed some eggs into other fruity dishes which I could not remember, to produce runny eggs.

    1. You must bake this for you wife lah. Get 10 brownie points hee..hee... Tenting is just covering the baking dish with a piece of foil so that the eggs don't cook too quickly.

  9. Runny yolks anything I love! ;) If I were you, I'd just eat the eggs even if the whites are not fully cooked through just like how some soft-boiled eggs are done. At some coffee shops, when I get set whites, the yolks are usually less runny. :(

    1. I do eat the runny whites but the problem I faced was the yolks are cooked but the whites were still transparent. Will experiment again this weekend if I have time.

    1. Actually I just pick those that are firm and when I get home, I leave it at room temperature until they ripen and soften.
