The other day I was sick. I had a sore throat, fever and I was coughing very badly. So I had to take two days off work.
Over the weekend I roasted a chicken for my weekday meals. I also bought two packets of salad leaves, cucumbers and a box of alfalfa sprouts. So healthy, right? hah...hah...
It's a good thing I did all that and I did not have to worry about my lunch and dinner. The components were all ready and just needed to be put together.
I also made a Honey Soy Dressing in advance. It's a mix of garlic, soya sauce, rice vinegar, honey, olive oil and sesame oil.
When I was hungry, I just gathered all my leaves and sprouts and such into my big bowl. Meanwhile, I zapped the chicken in the microwave.
I tossed the salad with the dressing and then added the warm chicken. And then I tossed some more.
So there you have it. My very nice chicken salad with Honey Soy dressing. Two days of that while recuperating at home. Nice!
Honey Soy Salad Dressing
Recipe source : Phong Hong
Ingredients :
- 2 tbsp light soya sauce
- 1 tbsp honey
- 1 clove garlic, finely minced
- 4 tbsp brown rice vinegar
- 1 tbsp olive oil
- 1 tbsp sesame oil
Method :
1. Put all the ingredients into a bowl and whisk until combined. Or put into a bottle and shake to combine.
2. Use to dress any salad vegetables that you like.

DeleteI used to make these salads for my wife but not for myself. I could not eat so much raw greens like a goat yet I made good salads too. Ha ha.

DeleteEr.. when I sick ah, especially cough and flu, I don't eat chicken. According to my mom and grandma, chicken is bad for cough and flu patients. So it became a habit. Sick time is pork and fish time... :/

DeleteWhen I see honey soy, I think of the salad shack that you posted yesterday.. You said the honey soy not nice, so you made your own today, yay! This honey soy looks easy to make, looks delicious too.. Your homemade salad more delicious la, and cheaper too.. I remembered it was about RM23 for a pack of salad, yes? Plus your nam-yue chicken from the chap farn stall, better make your own lunch..

DeleteI love salads but seldom make them at home. Hubby says he is not a goat and doesn't like eating salads. He prefers his veggie cooked.

Deletenice salad, i like that very much.. and glad that you actually stuffed up your fridge during the weekend and you can have something to eat at home.. still consider a luxury meal for a sick person, not just plain bread, hahaha.. and the dressing is nice too, i like that more than creamy dressing.. i also often make this kind of dressing, just simply soy sauce + sesame oil + sugar, and the combination is always good..
ReplyDeleteGlad to know that you also make and like the dressing. This oriental flavor dressing goes well if you used the Chinese style roasted duck or chicken to mix with the greens.

DeletePhong Hong, I hope you're feeling much better by now, I thing the Honey-Soy salad dressing did the cure for your cold, and cough. It's got all the ingredients in there that certainly will cure any basic ailments! How can you lose with honey, garlic, and ginger, which are basic ingredients to make you feel better even if you don't have a cold! Awesome, love the dressing!
