Please excuse the messy presentation. This is how real food looks like in my house. Especially when I cannot wait to dig in.
I cooked this fried rice because I was so impressed with the one I had at the Wedding Dinner. The recipe? I know jolly well where to get the recipe because I remembered Kimmy's Sesame Ginger Fried Rice.
Quite honestly, when I read Kimmy's post back in 2012, I thought that the ginger and sesame oil would be too overpowering. I mean, I love sesame oil and ginger especially in ginger chicken. But fried rice? Boy, was I wrong. So wrong.
All this time, whenever I cooked anything with sesame oil, I have always mixed my regular cooking oil (olive oil or grapeseed oil) with sesame oil. That was because I felt that sesame oil was too overpowering when used by itself.
Well, all my misgivings were proven otherwise when I bravely used all sesame oil when cooking this very flavorful and extremely delicious fried rice.
One important thing to remember is to use good sesame oil. I used my favorite which is Organic Toasted Sesame Oil. It costs a bit more but I appreciate the quality of the sesame oil. And the aroma is like no other.
This fried rice is not difficult to cook. But you need to spend some time shredding the ginger. How much to put is really up to you. Then you need to fry the ginger in sesame oil until it is brown as crispy.
I have always loved fried ginger, you know the ones they put on Chinese steamed fish or deep fried fish. When that comes to the table, somebody with sapu all the fried ginger. Somebody.
Well, I was blown away when I tasted this ginger fried rice. In fact this is better than the restaurant's because I added sliced pork and mushrooms. The one at the wedding had flaked fish in it.
Kimmy's recipe has crispy fried anchovies and that I will add next time. I was a bit lazy too pressed for time to fry the anchovies.
This is my second attempt at this fried rice. The first time, I had no intention of blogging about it. But since it was so good, I simply had to devote a post to share. So, if you love ginger and if you also love sesame oil, you must not miss this fried rice.
Ginger Fried Rice

Note : I am sorry I do not have exact measurements. Please visit the recipe source for reference.
Ingredients :
- Overnight cooked rice
- marinated pork slices (marinated with garlic, soya sauce, sesame oil and pepper)
- sliced shitake mushrooms
- ginger, finely shredded
- garlic, chopped
- light soya sauce
- dark soy sauce
- sesame oil
- coriander leaves
Method :
1. Heat sesame oil in wok and fry shredded ginger until brown and crispy. Do it in batches if you have to.
2. Remove the fried ginger and set aside.
3. In the same oil, fry garlic until slightly brown and aromatic.
4. Add marinated pork and fry until pork changes color.
5. Add mushrooms and continue to stir fry until pork is cooked and mushrooms are tender.
6. Add rice, light and dark soya sauce. Stir fry until rice is evenly coated.
7. Add half of the fried ginger and continue to fry the rice until all ingredients are well mixed.
8. Dish out and garnish with remaining fried ginger and coriander leaves.
I love ginger, I love sesame oil...so this is one fried rice I'll definitely want to make although your version here looks different from the ones I've eaten at restaurants. Their ginger is in very fine strands and you can see it all over the plate (I gather it must have been granted) while yours is shredded.
ReplyDeleteI totally understand your apprehension of using sesame oil as oil for the fried rice thinking it'd be overpowering. I was told the same thing when I made ginger wine chicken (my mother-in-law told me to use only sesame oil in the frying of the ginger and chicken). When I did that, I realised it was more fragrant (like she said).

DeleteI don't know how the restaurant get their ginger into such fine strands. They probably used a special grater because mine can't achieve that. So I had to use a knife instead. Now I am not afraid of using purely sesame oil because it is simply awesome! It made me at a lot of fired rice which is not exactly a good thing >.<

DeleteAhhh, your ginger fried rice reminds me of my confinement.. I had ginger fried after I gave birth to Sherman.. Mum cooked ginger fried rice with just minced pork, and a pot of kidney-liver ginger+sesame oil soup, and I had that 2 hours after I gave birth to Sherman.. I love your ginger fried rice, I can eat 3 bowls, minus the meat pun boleh, replaced with liver and kidney slices!

I notice that confinement food contains lots of ginger and sesame oil and that is really fragrant and delicious. I no confinement pun I wanna eat confinement food LOL!

I like to savour it 'hot' and you are right, good quality sesame seed oil will make this perfect. I used Penang Ghee Hiang Sesame Seed Oil. Know this brand so well cos' the factory is just nearby my childhood home. Your ginger is so well fried. Just thinking what it would be like if I add a sunny up egg fried with sesame seed oil and lots of ginger, hehehe! Where on earth can you get this kind of fried rice??? Of course, in our own kitchen.

Believe it or not, my daughter has to make fried rice different ways each morning to have my 9 yr old grandson taking it to lunch. I love this recipe and do agree with the heaviness of the sesame oil by itself. The ginger is always welcome, and as for the anchovies...how in the world do you deep fry those delicate little anchovies from a can? unless you use fresh ones. Even when I saute canned anchovies, they always break apart, although they do add a very nice flavor to all the savory dishes! I Google+ d it to share, and notice you don't use the Google+ sharing! Not too familiar with this whole Google+ thing and just recently added you on...not even knowing that you had added me until recently finding out (actually you added me back...lol)
ReplyDeleteElisabeth, it's nice to know that your family loves fried rice. It's something so versatile you can practically add anything into it and it always comes out good. As for the anchovies, we have dried ones here and that's how we can deep fry them. On the Google+, I am not so familiar with the functions. I only know how to add people or add them back LOL!

DeleteI used to dislike Sesame Oil as I thought it was popular for confinement mothers to eat and keep warm only. Later when the Koreans lived together with me in the States, I saw them pouring sesame oil into everything besides even make them into mixed sauce for dipping. I grew to like the taste as it is really an enhancer plus healthy too.
