On Sunday I was in an experimental mood. I wanted to make meat muffins inspired by what I watched on Youtube.
I am glad that I didn't throw out my muffin pans. I was talking to my mum not too long ago about decluttering. About how I have thrown out stuff and then months later, regretted. Hah!
I browned a packet of minced beef and then added the (leftover) bacon bits/onions that I cooked the week before (yes, they were still good and safe to eat). Then I let the whole lot cool.
And beat up three eggs. Then I added the eggs into the cooled meat mixture and added some shredded cheese.
The mixture was spooned into the muffin pans. Then topped with shredded cheese, pepperoni, sliced jalapenos and more cheese.
The amount of meat mixture was enough for just 10 muffins. It was then off to the oven at 180C for 15 minutes.
Wow your car porch has turned into kitties' playground :)

DeleteI think it's the cheese that binds everything together and makes it yummy. If I were to make it without cheese, I don't think the outcome would be as delicious....haiz. Btw, does jalapenos taste any different from our local green chillies? I've never used jalapenos in my cooking and that's because you can't find those at the wet markets. P/S: Your car porch is well sheltered from the rain? Otherwise all your cat beds will be basah kuyup! :D So sayang to leave your furry cat bed outside coz I'm sure it gets dusty and dirty very fast. Your car porch is fast developing into a mini playground. These kitties are very lucky to have you.
ReplyDeleteThe cheese and eggs act as binder and yes, the cheese make it so delicious! You can make without cheese but make sure you add the bacon. I think it will still taste good. There is a bit of difference in the taste of jalapenos and local green chilli.
DeleteThat area where I put the cat beds is outside my sliding door, and yes, it is sheltered. They mostly play in the garden or in my flower pots >.<
Wow! The meat muffins that you have cooked looks absolutely delicious 😋🤤 I could eat them everyday. After you have retired, you can make meat muffins to sell as a hobby and to encourage people to be full carnivores. Yummy! 🤤😋

2kg is not that much. Just walk a bit more and you can lose the weight. From your photos, you do not look overweight at all.
