Grandma's Macaroni Soup


When I was a little girl, my grandparents loved to cook macaroni soup with chicken and vegetables. Grandma called it "maconi" instead of macaroni. 

I was not familiar with pasta then, and just accepted "maconi" as "maconi". It was when I cooked Chicken and Vegetable Soup that I was reminded of grandma's soup.

In fact, when LiNa_Pg mentioned in her comment about adding macaroni into the soup, I told myself that I must do that one day and recreate the soup from my childhood.

It so happened that I had some more bone broth in the fridge so it was quite easy for me to put the soup together. I also had a small zucchini in the fridge and some carrots.


I chopped the carrot and zucchini into small cubes and threw them into the broth when it came to the boil. When the vegetables were almost tender, I added a cup of macaroni into the pot and let the macaroni cook in the broth.

My bone broth already contained some meat (which I salvaged from the bones) so my macaroni soup was complete with meat and vegetables.

I seasoned the broth with salt and pepper and that completed the macaroni soup. It would have been better if I had prepared some fried shallots.

You don't need a recipe for this. Just make some broth (or use a stock cube), add your meat, vegetables and macaroni. You will have yourself a complete one pot meal.

  3. i never quite had macaroni as a kid ... i think your soup would have been quite a favourite of mine at the age of eight though - it looks both tasty AND fun! :D

  7. Minggu sudah i baru buat maconi sup ni LL. Yang lagi bestnya, i pakai pes Sup Siam je, campakkan ayam. Senang sangatlah kerja i hihi...

    Yummy pot of macaroni soup. I always associate macaroni soup and porridge as "sick food" when I was a kid. Cos may late mother would cook these whenever I was sick.... hee... hee. Anyway, we have yummy comfort food anytime we like now.
