I read about Pineapple Coffee on Mun's blog and I was curious.
Yes, I have seen this item on Red Kettle's menu and I thought it was weird. To me coffee + anything other than milk is strange.
In fact when I read about bulletproof coffee (coffee + butter) I thought - yuks! But I have since embraced butter coffee (thanks to Mun) and it was delicious when I made it at home.
So I was at Red Kettle. I ordered the Roasted Chicken & Garlic Potato and feeling adventurous, I also ordered Pineapple Coffee.
This came to the table. Eh? Where is the coffee?
I took a sip and wah! Nice! Judging from the dark bottle, this must be a fermented drink - Tepache. It was a bit sweet for me, either they added sugar or the fermentation was stopped before it got too tart.
The potato wedges were mushy and overall this meal was all right, nothing exciting. When I went to the counter to pay, I mentioned to the manager that my Pineapple Coffee did not have coffee!
It turned out that I was served Fizzy Pineapple instead. In fact he told me that personally he doesn't like Pineapple Coffee. LOL! No worries about the wrong item because I enjoyed the Pineapple Tepache.
Then I went to this shelf to check Boey's other book - How Was Your Day. There was only one book left (there were 4 or 5 a few weeks earlier).
Fermentation was active on the second day.
I strained and bottled the liquid.
The liquid is pale because I did not add pineapple flesh like I did previously. I dare not put all the liquid into one bottle for fear that there was not enough space to contain the gas (it might overflow).
A day later I sample some. It was not visibly fizzy but I could feel the fizz when I drank the Tepache. Not bad at all!

Great quote. 👍 Roast chicken and garlic potatoes sounds delicious but it sounds as if you were underwhelmed by it. Mushy wedge potatoes wouldn't thrill me either, dear friend. And the fact that they put them under the chicken sounds unlike what a good chef would do. Thank you so much for sharing. ❤️
ReplyDeleteI expected a more pronounced garlic flavor but it was absent! Also I prefer my potatoes firmer. Perhaps the chef overcooked them that day.
DeleteNo wonder you say the drink is sweet....you got fizzy pineapple instead of pineapple coffee. I actually don't mind my potatoes a little bit mushy, I like them soft.
ReplyDeleteIt was a blessing in disguise because I am kinda certain I might not have enjoyed the coffee + fizzy pineapple. I like my potatoes firmer with a slight bite to it.
DeleteWah, U so keng 💪 U made your own pineapple tepache
ReplyDeleteHahaha, y U always kena served wrong items? I remember your tandoori chicken in halla holla
LOL! My luck is like that hah..hah...
DeleteBlessing in disguise! You were served fizzy pineapple instead doesn't matter since you like it haha, maybe you won't like the pineapple coffee beverage. Depends on what type of potato 🥔 for wedges I like it more on the fried and dry side but different if it is a whipped potato which I like it soft and mushy. Wah, you are so good in making fermented food and drinks.
ReplyDeleteI think so. The fizzy pineapple would have spoiled the coffee and vice versa. I have same preference as you when it comes to potatoes. Fermented food and drinks are easy to make but takes just a bit of effort.
DeleteBy the way, Happy Singapore Children's Day 2025 to anyone and everyone who is young at heart and retained childlike innocence, wisdom and peace.
ReplyDeleteIt is good to be young at heart and maintain that childlike feeling of peace and joy!
