Muesli Bars

I know those muesli bars up there look like a disaster. It was one of those Sundays when I tried to overachieve. I do that to myself all the time and sometimes I end up feeling overwhelmed.

I read Zoe's post on these Cookie-Like Muesli Bars Slices that her son was crazy about. I have since lost my baking mojo and hence you don't see Phong Hong Bakes baking anything. So I thought this recipe would give me a shot in the arm.

So. Since it was a busy Sunday with my meal prep and all, I set out to bake these muesli bars. It's not that difficult to make. You basically mixed up a bunch of stuff with melted butter and honey and bake it. I did not have golden syrup, so I substituted with honey.

What came out of the oven smelled wonderful. It was nutty and coconutty. I let it cool for a while before I sliced them into bars. I did not do a good job and as Zoe mentioned, these are crumbly.

They are crispy on the outside and very chewy in the middle. Not too sweet at all. Though I enjoyed these muesli bars when they were still warm, I found them too chewy for my liking.

If you want to try these homemade muesli bars, please refer to Zoe's recipe here. Zoe's recipe is nut-free but I have added walnuts in mine.

  4. I like chewy but are them hard chewy or soft chewy cos I prefer soft chewy. Not sweet is good for me but is the melted butter or honey very sticky? I don't like gooey stuffs sticking to my teeth.

If I make this, maybe we will end up using spoon to eat it ... don't think I'll make a neat cut.
