Mama....nanana.....lalalala.....


I was day dreaming the other day. As I was mixing muffin batter, I imagined that if I had a kid, the little tyke would be running around the dining table with a half eaten muffin in hand and a cute little face smudged with Nutella.

It was a nice thought. Then my imagination went further. The kiddo would probably kaypoh kaypoh and want a piece of the action. I would have flour all over the table and floor and Nutella all over the place. And maybe muffin crumbs on the sofa too. My OCD then kicks in big time and I go crazy. I'm bad, right?


I'm not maternal and I knew from an early age that motherhood was not my calling. I have always believed that not all women are destined to be mothers. I am honest with myself and with the people around me and as such I have spared a child or two from the pain of a reluctant mother.


Now back to the real world where I was faced with a bunch of over ripe bananas. These had to be disposed off in the best possible way. 


Besides, I had many bottles of Nutella to use up and many cupcake liners at my disposal. So. Nutella Banana Muffins it was.


After these were baked, chapter two of my imaginary child's capers kicked in. If the kid were older (supposing I was successful in not raising a brat), the kiddo could help me clean up the mixing bowls and spatulas. Hah! Dream on....










Banana Nutella Muffins
Recipe source : Phong Hong
Note : Makes 12 regular sized muffins

Ingredients :
- 230g self raising flour, sifted
- 1/2 cup brown sugar
- 1 tsp cinnamon powder
- 1 large egg
- 1/2 cup grapeseed oil (or any vegetable oil)
- 135g plain yogurt
- 1 tsp vanilla extract
- 4 medium sized very ripe bananas, mashed
- 12 teaspoons Nutella

Method :
1. Line a 12 hole muffin pan with cupcake liners. Set aside.
2. In a mixing bowl, whisk flour, sugar and cinnamon powder to combine. Set aside.
3. In another bowl, whisk egg, oil, yogurt and vanilla extract. Add mashed bananas and whisk to combine.
4. Pour wet mixture into the flour mixture and gently fold to combine.
5. Using an ice cream scoop, scoop batter into cupcake liners.
6. Then top each one with a generous teaspoon of Nutella.
7. Use a butter knife to swirl the Nutella into the batter.
8. Bake in a preheated oven at 160C for about 24 minutes (Check at the 20 minute mark and test with skewer. If there is still wet batter clinging to the skewer, bake for another 2 minutes and check. Repeat)

  1. Yeah, you're right....dream on! They'll help in the eating but not the washing up...haha! :D I once made muffins (ahem, a long time ago) and found the cupcake liners oily. What does that mean to the very experienced baker? Too much butter? Over creamed the butter and sugar?

    1. My liners are oily too, but not too oily. Could be due to uneven mixing of the butter mixture and therefore the oil not well dispersed. I'm just guessing hee..hee...

  2. Still, if you are a willing mother, you will find ways to train your kiddo to really help you with the aftermath clean up and not say "dream on".

    I don't have banana muffins with me, but I yesterday bought a loaf of banana cake for my weekday breakfasts this week. It is not as good as your muffins, I'm sure...

    1. That's the key thing - willing mother with a sense of discipline. If I had a kid, that child will be well trained. I cannot stand spoilt brats >.<

  3. Hmmm...got a few lovely marble cupcakes from my ex-student, the one making the lovely pies and tarts and it was so so so out of this world. Hers sure look a whole lot nicer, more dainty. Hehehehehe!!!!

  6. Hi Phong Hong, how I wish I can just grab a few from the screen. For months I wasn't in the mood for baking cos' my hubby isn't at home [he moved back to his mum's house to provide her with post-op care for 3 months]. Just came back last week. I steamed cakes instead. Hope I get back my baking 'mood' soon.

  7. No thanks to imagined children but thanks in advance for the delicious banana nutella muffins. I think a very long time ago I bought nutella to try after reading how nice it was but for the life of me now I can't remember how it taste except that it is very sweet, too sweet for me so I have never eaten it since that time.

  9. Beautiful muffins. I would love to munch on some of them. Talking about muffins, I was thinking of making muffins yesterday but not really in mood to make it. One day. When inspiration comes back. Haha.

  10. yeah, of my female friends, i feel like there's a 50-50 split ... half of them are clearly maternal, and the other half aren't - it's good that in this century, women don't have to be forced to become moms, and hopefully the pressure will continue to decrease. we have enough children in the world anyway, heheh! :D i've never tried a banana nutella muffin - i'm intrigued! :D

    1. Glad to have a supporter hee..hee... Many especially the older generation cannot accept this idea. They think our purpose is to produce to replenish the next generation and pass down the family name. And having many offsprings and grandkids a form of wealth.

  13. Good imagination Phong Hong. For me, I believe kiddies should run around at playgrounds or outdoor activities. At home WALK and no stomping. .. ha...ha! Banana + Nutella will never go wrong ... my big kids love these yummy muffins!

  17. Gosh, it is going to rain soon over at my place in SG, with thunders, nice weather to sleep... by the way I am single and don't have kids too, but lucky I have a nephew to play with, I love young children
