Chocolate Cherry Crunch Cookies


It's finally over, all the festivities. Saturday evening was the last of my kenduri cooking session. I did some baking a day before the eve and also on the third day of Chinese New Year. Now that everything is settled and quiet, I can do another spot of baking.

When I got back to work last Friday, I visited the pharmacy to pick up some supplements. At the same time I was attracted to a bottle of dried cherries. I immediately thought of cherry cookies.



So last Sunday, cherry cookies it was. Since I still had some cornflakes leftover from the earlier bakes, I crushed these up and added them to the cookie dough. 

I think cornflakes is marvelous in cookies. They give the cookies crunch and that nice cornflakes flavor and aroma.


I loved these cookies! There's the tart chewy cherries, chocolate chunks and of course the crunchy cornflakes. Dried cranberries would also work well in these cookies. Besides they are a lot more affordable than cherries.


I sort of regret not baking enough for Chinese New Year. There simply wasn't enough time. I do hope to fare better next year hee...hee...



Chocolate Cherry Crunch Cookies
Recipe source : Phong Hong

Ingredients :
- 250g self-raising flour
- 250g butter
- 1 egg
- 1/2 cup caster sugar
- 1 tsp vanilla extract
- 170g dried cherries (cut bigger cherries into 2)
- 160g chocolate chunks (I chopped from a bar of chocolate)
- 1 cup cornflakes, crushed

Method :
1. Cream butter and sugar until light and fluffy.
2. Add egg and vanilla extract and continue to mix until combined.
3. Add cherries, chocolate chunks and cornflakes. Mix until well combined.
4. Add flour and mix until well combined to form a dough.
5. Using a small ice cream scoop, scoop batter onto a lined baking tray. Use a fork to slightly flatten the dough.
6. Bake in preheated oven at 160C for 16 minutes, rotating the tray at half time.

    2. Eh, how your cookies become hard like rock pulak? Usually cakes can turn hard like rock hee..hee... But like what Louiz said, can celup in kopi or Milo.

  3. If the cookies have something tart in them like dried cherries and cranberries....I like although I don't eat cookies all that much! :)

  4. Sekali pandang looks like Famous Amos's raisin cookies.. Cherry, seldom eat, but dried cranberries, always eat.. This is something which I can finish in a day's time.. The whole jar, serious..

  7. Aiyo, why you liddat one? Even pharmacy also you can find something to make you think of cookies.

    And you make me think of Famous Amos cookies already. Cannot, I must tahan, need to control my diet. 2 more weeks got eating binge adventure again >.< ...

  8. Hi Phong Hong, I can see that your cookies are very crispy and crunchy. I was down with flu before and during CNY. Didn't enjoy any cookies that I made, oranges and other goodies [CNY dishes] until 2 days ago when I'm back to my 'nest'. Luckily, I did manage to fulfil my duty as DIL in my MIL's house during this time. Thank God.

  9. hahaha, Aunties Rock!! she went into the pharmacy to pick up some supplements, but she was carried away by the "supplements" for her cookies instead!! haha, well, can't blame you, dried cherries actually look quite interesting also, what's more to a "Baking Queen"??

    the cookies looks great!! i can imagine cherry and chocolate, they match!! and probably if the chocolate is those kind that consists of cherry liqueur in it, wah, lagi match and make the cookies taste even nicer kan?? haha.. i wonder if this suggestion would inspire you something and get carried away once more when you were doing your grocery shopping in the supermarket?? hehehe~~ :p

  10. Actually I have thought of doing some cookies this CNY.. I even ajak-ed my friend already to come over and help me.. but due to our busyness, day after day, we procrastinated till we finally agree that we will do it after our CNY cookies are eaten up first! hahahaaa...

    CNY is always hectic... please don't say that you have not bake enough for CNY! You have been baking a lot throughout the whole year and isn't this better than just baking for CNY??? :p

    Your cookies looks wonderful! Dried cherries are very expensive, I bought mine from Bake With Yen, the baking supplier store, I think cheaper than what you would find elsewhere.
