Cheese and Luncheon Meat Omelette

This is my favorite breakfast but I don't get to cook it often because mornings are such a rush. By the way, this post has been sitting in my draft folder like forever hah..hah...

When I was small, my grandma used to make luncheon meat sandwiches (with tomato sauce, yum!) for me. Another thing she liked to do was dip the luncheon meat in beaten eggs and fry it until golden brown.

When I buy a can of luncheon meat, I would transfer the meat into a glass container. Then I slice them for convenience. When I want to make an omelette, all I need to do is to take one out and cut it into small cubes.

This omelette is quite easy to put together. What you need is sliced big onions, luncheon meat, cheese and of course, eggs. I also like to add green chillies/cili padi for aroma and some kaboom.

It makes for a very hearty and filling breakfast and I won't feel hungry until 1:00pm. I usually try to make this breakfast especially when I am attending seminars so that I can resist the temptation of tea breaks. The food served during tea breaks are almost always made of carbohydrates and full of sugar.

I love this with tomato sauce.
Although I am not partial to cheese, I quite like cheddar cheese in omelettes. It makes the omelette very creamy and tasty.

Cheese and Luncheon Meat Omelette
Recipe source : Phong Hong

Ingredients :
- 3 eggs, beaten
- 1 slice luncheon meat, cut into small cubes
- 1 big onion, sliced
- 1 green chille, sliced (optional)
- 1 slice cheddar cheese, cut int0 2

Note : I don't add salt because luncheon meat and cheese are already salty enough for me.

Method :
1. Heat oil in frying pan and saute sliced onions until wilted.
2. Add luncheon meat and saute until slightly brown.
3. Add green chilli (if suing) and fry until it is slightly soft.
4. Pour in beaten eggs and when the egg is almost set, place the cheddar cheese in the middle of the omelette and fold the omelette over.
5. Remove omelette from the pan into serving plate and eat immediately!

  1. Good morning & happy Friday Phong Hong! Eh, my favourite !! Can I like 100 times? Minus the green chilly and onion la.. I always fry luncheon meat and egg together if I don't know what to cook for dinner, eat with white rice and Bovril, sedappp.. Or I fry luncheon meat and egg separately, "kiap" with cheese, spread mayo, bawak bekal to work.. I buy Gu Loong brand..

  2. I like this omelette a lot (especially with onions and green chillies)...except minus the cheese! Luncheon meat and eggs...classic combination.....and I love these in a sandwich (I want to eat it all the time but have to refrain myself). In fact, I just had nasi lemak for breakfast (at a Chinese coffee shop) with tambah luncheon meat. I see your luncheon meat is an imported, better quality one from the oblong shape! :D

  4. oooh, omelette!! i like that.. i also like the chinese version called "foo yong egg".. BTW, both are omelette i supposed but like it's very distinctive between the western and the chinese version huh?? probably the addition of milk and cheese in the western version.. okay, now i have a "light bulb" appearing beside my mind, will adding some "shao shin wine" into the chinese version nice?? never tried that before, hahaha..

  5. luncheon meat and onions and chilis and CHEESE!! oooh, this is sure a very loaded omelette, but are you sure it can last you till 1pm and you do not need to "replenish" yourself with those refreshments during tea time?? i can eat a lot of things for breakfast, probably i still need a few more stuffs to go with the omelette like toasts and sausages and bacon and ham etc, hahaha!!

  7. i like your omelette especially that you used luncheon meat!! i also like luncheon meat with a piece of fried egg, "kiap" between two square bread, with tomato sauce and two slices of cucumber!! oh, that was so retro and i always yearned to eat that when i was a kid, it was one of my "dream breakfast".. okay, i admit i like that still.. back to your omelette, it looks so delicious especially when i saw the ingredients slightly browned and then the oozing "juice" from the cheese blended with the egg, oolala!!!

  15. Wow.. with cheese embedded inside the eggs? This is a new recipe to me... my girl will love it but will skip two meals after this.. she is one very conscious of her food intake, just the opposite of me, I like food whether savoury or sweet, I am IN for them! It has been a long time since I took luncheon meat, the last one I took was this SPAM, a bit saltish but I like the taste and texture, not so soft...

  16. Unbelievable that I have never had this before! I thought the bits were bakkwa at first, but then it would have been too chewy and contrasting to the egg and cheese. Luncheon should be way better.
