Korean BBQ Slow Cooker Ribs


I was at Cold Storage again when I discovered an aisle filled with Korean products. Anything Korean these days bring about a lot of excitement. I'm only into the food and I know nuts about K-pop or Korean melodramas. Something Korean caught my eye.

It was this bottle.


We all love Korean BBQ don't we? Or Korean fried chicken. So of course I was excited when I spotted this Korean BBQ Sauce. It looks very red and the label says "Hot & Spicy".


This sauce contains Korean pear puree and apple puree. And of course the famous Korean red pepper paste.

I had 2 racks of ribs in the freezer which I reserved for another spot of BBQ ribs. I do miss my BBQ ribs and I remember the last one was phenomenal. I used the same method with equally good results.


Before cooking, I was debating if I should apply a dry rub on the ribs. In the end I applied the dry rub about 2 hours prior to placing the ribs and BBQ sauce into the slow cooker.


After opening the bottle, I had a taste of the sauce. It tasted very much like chili bean sauce (toban djan), pungent, salty and sweet. And it was also very hot whoohoo! And the best part is that I made the dry rub with 2 teaspoons of cayenne pepper which means my ribs will be explosively hot.


True enough, when the ribs were ready, I had a taste of the sauce and yikes! It was super pedas (hot)! Luckily, I made some coleslaw and that would sure help me to cool things down a bit.


Before tucking in, I grilled the ribs in the oven for about 10 minutes to caramelize the ribs a little bit around the edges. Well, I don't have to tell you how good the ribs were. They were moist and tender, the meat falling off the bone. The extra spiciness was alright by me. In fact it added a real kick.

It's great you know, this method using the slow cooker. Now I can forget about having my ribs at the restaurant as I can enjoy a really good one at home at a fraction of the price. 

There's still quite a bit of the BBQ sauce leftover and I am looking forwards to making some Korean chicken wings soon!









Korean BBQ Ribs
Recipe source : Adapted from here

Ingredients :
- 2 slabs of ribs (about 400g each)

For the dry rub :
- 2 tsp smoked paprika
- 2 tsp cayenne pepper (use less if you prefer less heat)
- 1/2 tsp sea salt
- 2 tsp garlic powder

BBQ Sauce :
1 cup of Korean BBQ Sauce

Method :
1. Mix all the dry rub ingredients together.
2. Rub the mixture all over the ribs.
3. Let stand for 2 hours or overnight.
4. Put the ribs into the slow cooker in a vertical position, ie propped against the sides of the cooker.
5. Pour BBQ sauce all over the ribs and place a piece of baking paper over the ribs to cover them.
6. Cover with lid and cook on high for about 2.5 hours (test for doneness by poking the meat using a fork)
7. Once tender, carefully remove the ribs and place them on a lined baking tray.
8. Baste the ribs with the remaining BBQ sauce from the slow cooker.
9. Grill at 200C in the oven for about 10 minutes until the edges are caramelized.

  2. I thought put the ribs in the oven all the way? Oh, you put in slow cooker.. If slow cooker, then I'm imagining stew/gravy kinda thingy.. But the ribs look so good.. If you tak cakap pedas, it looks like those restaurant pai kuat wong timmm.. Wah, got slaw somemore, my favourite.. I don't like veggies, but I like coleslaw, hehe.. So far, I only use my slow cooker to boil red bean tongsui, haha.. Coz red bean takes a long time to become soft, and I don't wana use my stove to boil.. I heard people use slow cooker to make kaya too.. Must do it one day..

    1. Put in the slow cooker is easier and I already know 2.5 hours can kau tim. This is the best way to coo ribs. For me lah :D

  4. Oh yes ! This is one of my favourite sauce ! I usually season it with chicken wings then grilled, pan fried or oven baked. These BBQ ribs looked very yummy-licious! I must try it in slow cooker.

  5. I'm not into Korean food or K-pop either but I'm addicted to Running Man! :D

    I've not used my slow cooker for anything else other than making soups. I'm very intrigued that it can do this. By the way, how do you prop up the ribs at the side of the slow cooker (in a vertical position) and pour the BBQ sauce over it? Wouldn't it just run down the ribs and settle at the bottom of the cooker? Wouldn't it be easier to rub the sauce into the ribs and then prop it up in the cooker? Also, what's the purpose of covering it with baking paper as there is already a lid to prevent splattering? And cooking for 2.5 hours in a dry pot, will the bottom be burnt? Finally, when you say grill at 200C, you mean bake, right? Sorry, my dear, for asking so many questions as this looks like a recipe I'd like to attempt! ;)

      You need to cover with baking paper to minimize loss of moisture. The pot is not exactly dry because there is BBQ sauce inside. It will get a little bit burnt at the sides though. Yup, bake at 200C :D Try it, you will love the outcome!

    I love that spicy meat you marinated and exploded in your mouths. How come you didn't grill or roast in the oven? I wonder how you made it look so neat and dry using slow cooker which supposed to be soupy. Wonder chef PH!

    1. I did it in the slow cooker because it is so easy, just chuck it in there for 2 hours or so and then simply grill to caramelize it.

  7. Hi Phong Hong, these slow cooker cooked ribs look so so good. Can see they are tender and pack with flavours. I fully agree it is good idea to cook using a slow cooker but I don't know when I'm going to start using it...must get a slow cooker first...anyone has a slow cooker to spare? hehehe!

    1. Hi Kimmy! Slow cooker is a very useful tool. At first I only used it for soups/stews. Now it is even more useful for cooking ribs!
