Pumpkin with Dried Prawns and Curry Leaves


There are already more than 500 entries for this month's LTU event and Eileen is one busy lady. Who would have thought that the humble pumpkin, fabled to turn into a golden carriage by Cinderella's Fairy Godmother, would garner such overwhelming support. Good to know that so many of us love pumpkins!



I had three wedges of leftover pumpkin and I did not want to keep it in the fridge. That would mean that I would have to cook something with it. I remembered the pumpkin dish cooked with dried prawns that is usually available at the "chap fan" stalls.


And then I remembered Louiz left me a comment in one of my pumpkin posts and she mentioned curry leaves. I have lots of curry leaves in the garden as my curry plant is doing very well. I wasn't certain what sort of seasoning went into this dish and I reckon I can't go wrong with soya sauce, oyster sauce and fish sauce. That's my holy trinity of seasonings. The dish turned out very well, fragrant and tasty. Too bad that it was just a small serving.

Well, it looks like this is my last pumpkin submission to LTU but certainly not the last time that I cook with pumpkins. Eileen must be heaving a sigh of relief. And so are our families who have been fed with lots of pumpkins this month!




Pumpkin with Dried Prawns an Curry Leaves
Recipe source : Phong Hong

Ingredients :
- 3 wedges of pumpkin, peeled and cubed
- 3 cloves garlic, minced
- 1 tablespoon dried prawns, soaked, rinsed and drained
- 1 tablespoon light soya sauce

Seasoning, mix together :
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- Leaves from 3 sprigs of curry leaves

- pepper to taste

Method :
1. Heat oil in wok and fry curry leaves till crispy. Remove and set aside.
2. Add minced garlic and fry till fragrant.
3. Add the dried prawns and fry until brown and fragrant.
4. Add pumpkin, stir fry and add some water, cover and simmer until pumpkin is tender.
5. Add seasoning and stir to mix.
6. Add pepper to taste and serve.

    pumpkin with dried prawns and curry leaves.. hmm, sounds also a little Indian to me.. or you are actually cooking this to celebrate Deepavali and Halloween at one go?? hehe.. HAPPY DEEPALLOWEEN I have to say then, haha!! :)

    1. SK, this fusion of Chinese and Indian where curry leaves are used in Chinese cooking is really good. Just like in butter prawns :)

    This is the dish I used to cooked.... it is so tasty!! Actually I really dont need any other dish for my rice....this is just enough. So delicious

    Wah, all the ingredients are available in my kitchen EXCEPT the MAIN ingredient that is Pumpkin. Hahaha... Macam mana tu? :D

  6. Good morning sweetie.. Yep pumpkin stir fried with curry leaves and har mai.. Can't go wrong, taste gooooooood...Ingredients all very simple, but very nice.. No gravy but I can eat 2 plates of rice with this..

  9. This is your 5th pumpkin dish this month....you surely do love your pumpkins! I'm not such a big fan and I don't cook them (coz it's just too huge for 1 person to consume) but I do eat it when I find them at "chap farn" stalls.

    1. I love pumpkin! I usually buy those pre-cut ones and I can choose the size that I want. I don't usually buy the whole pumpkin as it is quite hard to cut :)

  11. Wow! I never fail to scoop this at the mixed Rice shop but I didn't see the shop adding small dried prawns. That would be nicer. Now I am studying your recipe whether I should make this myself as I love pumpkins.

  14. Phong Hong, I know this is very fragrant ... dried prawns savoury taste & pumpkin sweetness. But I'm not a fan of dried prawns, just seldom use them for cooking.
    Ha ha! ... luckily my girl is not too freak out in pumpkin. Strange, she wants to cook something with butternut squash over the weekends !!! Gosh!

  16. Yum! Love fried pumpkin with curry leaves. I make this the Indian way with mustard seeds instead, courtesy of an Indian friend. I've had this version too and thought the dried shrimp made a great flavor to the whole dish esp when it's crispy. Now you've made me wanna go buy more pumpkins. I think my skin is starting to turn orange ....

  18. hmm..curry leaves..i shall try adding it in next time as i do cook pumpkin with dried shrimps occasionally! i also still have half a pumpkin in fridge ..thot of making another entry for LTU but have been a bit busy...You can still submit your pumpkin post to MIss B's event, it will last thru nov too if im not mistaken. You go read the intro post and check again.
