Pumpkin Rice


I wanted to eat something good. Something really good. After a few days of hospital food and "chap fan", I really needed to eat something good!

Let's see, what do I have in the fridge? A few sad wedges of pumpkin (leftover from the week before), lots of frozen meat in the freezer and some lap cheong in the chiller. There's also some Basmati rice in the pantry and the best thing to cook is a one-dish meal.


I had defrosted and marinated the meat and left it to stand to room temperature while I prepared the other ingredients. I was still very weak and tired but I had to cook to feel alive again. Luckily, this is a simple dish. And thank God for the rice cooker!


It was well worth the effort. Best meal that I had in days hah...hah... and no, I'm not blowing my own trumpet. This is a really, really good and hearty one-dish meal. 


I know, I know, the carbs! But hey, I am recovering from dengue and I have to keep my nutrition up. This is not the time for dieting! I am really glad I ate something good. Burpppp.....










Pumpkin Rice
Recipe source : Phong Hong

Ingredients :
- 2 cups uncooked Basmati rice, washed and drained
- 3 cups water

- 300g pork shoulder loin, cut into cubes
- 2 cloves garlic, finely minced
- 1 tablespoon oyster sauce
- 2 tablespoons light soya sauce
- 1 tablespoon fish sauce
- 1 tsp dark caramel sauce

- 300g pumpkin, cut into small cubes
- 6 shitake mushrooms, soaked and cut into cubes
- 2 tbsp dried prawns (hae bee), soaked, rinsed and drained
- 2 cloves garlic, finely minced
- 1 Chinese sausage (lap cheong), casing removed and finely sliced

- chopped spring onions

Method :
1. Marinate the pork shoulder loin with garlic, oyster sauce, light soya sauce, fish sauce and caramel sauce. Set aside for 1/2 hour.
2. Heat oil in wok and saute sliced Chinese sausage until lightly browned. Dish out and set aside.
3. In the same oil, add minced garlic and saute until fragrant.
4. Add dried prawns and continue to fry until lightly browned and fragrant.
5. Add marinated pork and mushrooms. Add some water and simmer for about 20 minutes.
6. Add rice, fried Chinese sausage and pumpkin.
7. Give it a stir to mix and transfer everything into rice cooker
8. Add 3 cups of water and cook the rice as usual.
9. Once cooked, add chopped spring onions and serve hot.

  3. Hello Phong Hong, glad to see your are cooking again, means recovered liao.. But still need to rest more k.. Yes, I love one-pot dish, like one-pot chicken rice, pumpkin rice, yam rice.. Boy, from your pictures, no need to eat also know it's good liao la.. Really.. Very "yap mei" and "heong" becoz of the lap cheong and har mai, wow, all my favourite! And yes, thank god for the rice cooker :)

    1. Hi Louiz! I am still not fully recovered, still feel fuzzy and tired. But got to eat mah? This type of rice with lots of liew and just simply campak into the rice cooker is my favourite meal. So easy and yet so sedap!

  6. Oh? A friend gave me pumpkin bread that day - in today's post. I've cooked pumpkin porridge before - in place of sweet potatoes, never pumpkin rice. My girl would love this - she loves pumpkin.

  7. hello Phong Hong!! already recovered and now back with the cooking and baking mojo?? glad to know that you are finally back in action!! :)

    and the first strike after your long hiatus seems to be such a delicious looking pumpkin rice, of course i can only say "seems" because i can only see and not taste it (boohooo!!).. basmati rice, i actually like the texture, (or maybe the texture of all types of rice are the same??) it feels different chewing on basmati rice compared to our types of rice here.. and i heard if the rice is longer, the digestion is easier?? or the other way round?? haha..

    and certainly a very loaded pot of pumpkin rice!! look at the color, look at how many "liu" you have put in.. oooh, i love the mushroom and chinese sausage and dried prawns, can already imagine how fragrant the rice is with all these ingredients!!

    so forget about dieting!! you have been deprived of good food for the past two weeks!! so forget about that for the meantime and savor all the nice things you have baked or cooked!! it's long weekend, celebrate~~ hahaha!! :D

    1. Hi SK! I am not well yet, still feel tired. I heard that it is normal and full recovery takes another 4-6 weeks. But I have to eat and therefore I have to cook! This rice I tell you, really cheered me up. All the ingredients blended well together and made the whole thing so tasty. Basmati rice is my preferred choice due to lower carb content. But even then, it is still a high carb food. No dieting for now. I have to focus on getting well!

  10. With pumpkin, one can do lots with it... my mom likes to boil pumpkin soup with big onions, tomatoes... just like ABC soup...can make sweet and savoury... I like pumpkin but haven't tried fried rice with it before.. Must be very nice too.. it has lots of nutrients I heard... can make claypot rice with it too... yummss!

  14. Hi Phong Hong, your pumpkin rice looks so good but it brings bad some sad memories. I have never cooked pumpkin rice since 5 years ago. I remembered I cooked this rice for the first time and that was on day my FIL passed away. Nobody in the family enjoyed the rice. It was tasteless to us. I was thinking of cooking it again but never has the courage to do so.
