Pizza Potato Skins : LTU Potato


The only thing right about my Pizza Potato Skins is the potato skins itself. All the other ingredients were all wrong. I did not have pizza sauce, no mozzarella cheese and the Italian sausages tasted weird. But I wanted Pizza Potato Skins. Badly.



And I've got to tell you there's a lot of work here. As far as I am concerned of course. To some people, potato skins are a breeze. The Pioneer Woman sure makes it look easy. But believe me they are not. Took me a few hours to get it all together. First up, bake the potatoes. And before you do that you have to scrub clean the skin, dry it and then rub with oil. After a sprinkling of salt, you bake it in the oven for about 40 minutes. While all that is going on, you get your other ingredients ready. Like frying the Italian sausages or bacon or whatever it is that need to be fried.


And before you can dig out the flesh, you have to wait for the potatoes to cool first. I did this last Sunday and it was a good thing that there was a distraction for me. Amelia of Amelia's Dessert was on RTM 1's Pelik Tapi Sedap. So I watched my friend in action while my potatoes were cooling. You did great, Amelia! My only complaint is that your segment was too short. While local celebrity Dynas was cooking Amelia's dish, I had to nip back to the kitchen and do some digging. It was quite a job digging out the potato flesh, all the while being careful not to break the skin. Dig, dig, dig. Sweat, sweat, sweat. It was a very hot afternoon. Which explains why I did not take photos of the whole process.

I topped with Lingham Chili sauce to kill the taste of the Italian sausages.

After that, you have to brush the potato inside and out with oil and put it back in the oven for 5-7 minutes each side. Once this part is done, you can assemble your "pizza". I hate to say that I used pasta sauce in place of pizza sauce and cheddar cheese in place of mozzarella. I swore that I could have just eaten the crispy potato skins as they were. Kosong. But I loaded them with all the wrong ingredients before sprinkling them with chopped Italian parsley (now that, I like a lot!).


After the customary photo shoot, I grabbed a potato skin. Still hot and crispy. So was it good? Are you kidding me? These are potato skins, so how could they not taste good? But if only........I had the right fillings. But still, I was happy. One by one the skins disappeared. I have got to do this again. With the right fixings of course. So if you have nothing better to do on a Sunday afternoon, make potato skins. It's worth the sweat.










Pizza Potato Skins
Recipe source : Adapted from The Pioneer Woman

Ingredients :
- 4 whole Russet Potatoes
- Olive oil
- Sea salt
- Marinara or Pizza Sauce (I used Pasta sauce, did not like the taste)
- Grated Mozzarella Cheese (I used sliced Cheddar cheese, not too bad)
- Diced pepperoni (I used Italian sausages that tasted funny. Or is it me?)
- Minced fresh parsley

Method :
1. Preheat oven to 200C
2. Scrub potatoes very clean and dry them. 
3. Rub the surface of each potato with olive oil. Sprinkle with sea salt.
4. Bake until the potatoes are tender and the skins are crisp, about 40-45 minutes.
5. Cut the baked potatoes in half. The use a spoon to scoop out most of the insides leaving a bit of a rim all around.
6. Brush the inside and outside of each half with olive oil.
7. Place the potatoes skin side up and return to the oven for 5-7 minutes. Turn them over (using tongs) and put them back in the oven for a few more minutes or until the potatoes are crisp.
8. Remove them from the oven and set aside.
9. To assemble the skins, fill each skin with a spoonful of marinara or pizza sauce. Add a good amount of grated cheese and sprinkle on some diced pepperoni. Return them to the oven just for a couple of minutes or until the cheese is melted.
10. Sprinkle with minced parsley and serve immediately.

Note : There are many other variations of fillings : sausages, hamburger, bell peppers, diced onions, diced mushrooms, diced bacon etc.

  1. errr, don't have the ingredients needed?? what's the problem?? it's always nice to "improvise" in the kitchen with whatever you have, and you have your own little imagination and creation, most of the time, you were able to come out with something different from the original recipe and at times even better, agree?? i always say, cooking is "art" and not "science", not necessarily must follow exactly all measurement, but go with your heart~~ :)

    1. SK, I know but this is supposed to be pizza mah. Pizza use mozzarella cheese and pizza sauce. So I feel that what I put not ngam lah. And the sausages taste funny to me. Tak sedap. But of course lah, overall with the crispy potato skins it was good!

  2. and your potato skin looks good lah.. don't care whether it's pizza or just sausage, as long as it's tasting good, then it's good right?? and boy, sausages and potatoes, two of my favorite things in one, how can i not love it?? and i am curious to know. where have all the potatoes been?? you sure did not just throw them away, but cooked another dish with them right?? :)

    1. Ah...I sort of expected someone to ask what happened to the potatoes that I dig out. Of course I did not throw away. That would be wasteful, right? Wait for it in the coming posts and see what I did with it :)

  3. Morning morning Phong Hong.. Ahhh, I like the food today - potato skin pizza.. I don't usually call it potato skin pizza, I usually call them crispy potato skin.. They will load the skin with cheese, sour cream and some beef chilli.. Sedap...
    Eh, seems like a lot of work need to be done hor.. But nevermind la, janji sedap and habis all.. I can easily habis everything la..
    Wait, what did you do with the scrapped potatoes? Add milk & butter and make into mash?

    1. Hi Louiz! This potato skin damn syiok I tell you! After seeing how much work goes into it, I won't complain about the price of potato skins at the restaurant. It is always so much better when someone else do it for you. Eh, I want to make again with different filling. And the scrapped potatoes? That one wait lah. I will post soon :)

  5. Piza Potato Skin! Huhuhu... Lagi satu menu pelik. After this tak tahulah apa pulak si Phong Hong ni nak experiment!

    But with all the work needed to be done to enjoy this particular menu, I rasa, I oder pizza ajelah Phong Hong... hahaha...

  8. Hi Phong Hong,

    Maybe the Pioneer woman got her children helping her to scrub the potatoes... LOL! I thought some potatoes sold in the supermarket can be washed and so less scrubbing is required :p I know typically cook shows makes everything looks very easy but the preparation can be also very time consuming... kind of deceiving :p

    The least the scrubbing is over... enjoy these yummy potato skins :D

    1. Hi Zoe! The skin of the russet potatoes are still gritty when bought from supermarket. I washed them early morning and left them to dry. Well worth the effort!

  10. Wow ! Phong Hong, at least you still have time to watch tv ...I was busy with household chores in between when I baked these skins. Okay, next time shall ask my big kids to scrub clean the potatoes ... ^-^

  21. Hi Phong Hong, wanted to try some recipes with potatoes but with my suspected 'high blood sugar', I'm having second thoughts. Maybe I can still prepare some but eat little of it, poor thing. Hope my GTT result is OK. I prefer cooking with Russet potatoes - sweet and creamy. This must be good.
