Sweet Corn and Sago Dessert


Mmmmm.....I have forgotten the wonderful taste of santan, gula Melaka and pandan. And you can imagine my delight when I tucked into this Sweet Corn and Sago dessert. When I was thinking of what else I could do with corn, I suddenly remembered my Grandma's "pengat" and she has made a "pengat" with sweet corn, santan and eggs. I have never cooked this type of dessert before and as usual I would peep into K. Nor's kitchen for ideas and found a recipe for Bubur Jagung. Thank you my friend for this delicious dessert!


I know that my Mum will be very surprised to see me cooking Bubur Jagung because back home we never cooked stuff like this. Only at my Grandma's do we get to eat all this "pengat-pengat" and the truth be told, I never really appreciated it when I was a child. My Ee-Ee however cooks these type of desserts which in Cantonese is referred to as "thong sui" or loosely translated as "sugar water/sugar drink ???" (I think so lah, correct me if I am wrong). We all love her "thong sui" which she would serve after dinner.



I had some leftover corn from making Corn and Vegetable Fritters and the amount was just nice for me to make this dessert. It is so simple. Just boil the corn in water until it is tender, then add sugar, gula Melaka and santan. Simmer and then add the soaked sago and continue to simmer until the sago turns translucent. This dessert can be served warm but I cooled and chilled it in the fridge. I was too lazy to cook dinner and I just had this dessert instead :) And I really, really enjoyed it very much. Ah, the freedom to choose what to eat for dinner. Hee..hee...


I am reproducing K. Nor's recipe below with my modifications in red.










Sweet Corn and Sago Dessert (Bubur Jagung)
Recipe source : Secubit Garam

Ingredients :
- 3 cups fresh or frozen corn kernels ( I used about 1.5 cups)
- 5-6 cups water (I used enough to cover the corn)
- 1 cup fresh santan/coconut milk (I used about 100ml of the packet santan)
- 1/2 cup sago, soaked (I used 2 tablespoons and soaked for about 15 minutes)
- 3 tablespoons sugar, or to taste (I used 1 tablespoon)
- Some gula Melaka/palm sugar (I used about 1 tablespoon)
- 1/2 an egg, beaten (I omitted)
- 2 pandan leaves, knotted (I used only 1)
- a pinch of salt or to taste

Method : 
1. Boil corn, pandan and water.
2. Once it is boiling, add sugar, gula Melaka, salt and santan.
3. Lower the flame and simmer until corn is tender, stirring constantly to prevent the santan from curdling.
4. Rinse the soaked sago and drain.
5. Bring the corn mixture to a boil and add sago and beaten egg. Stir so that the egg does not curdle.
6. Continue to simmer until sago is translucent.
7. Serve warm or chilled.

    1. MamaFaMi, I suka sagu! Tapi kalau tak letak sagu pun sedap juga, especially when it is cold from the fridge. Boleh ngap dua mangkuk :)

  4. kadang I fikir..I ni masuk rumah orang Melayu ker rumah orang Cina? your cooking ar, langsung tak nampak macam orang Cina punya masakan...ni macam Cina Baba kat Melaka la ni...

    haduii PH...naik kembong dah perut I dok asyik telan air liur bila masuk sini, ni nak kena makan kerepek kaduk lagi bagi buang angin kembong LOL!
    I suka gila pengat or bubur jagung sagu nih! tapi kalau buat pengat guna santan, memang mesti taruk telur (perah campur kelapa parut tu), kalau taknak telur, I campur tepung jaagung sikit, kalau tak nanti asyik nak terbatuk2 bila telan santan tu hehehe...tp kalau ada sagu or makan bubur terigu, takyah telur or tepung jagung sebab itu pun dah cukup melicinkan tekak hehehe..

    thanks pasal budu tu ya...I pernah makan chap ketereh tu, ya memang sedap! warnanya yg kemerahan tu pun nampak lebih menyelerakan ek? )degulp! degulp! telan air liur lagi ni...

    1. Q, I ni keturunan Baba Nyonya Terengganu. Masakan kat rumah kita orang banyak persamaan dengan masakan orang Melayu. Sebab tu, PH tak pandai sangat masakan Cina. Kalau makan pengat, I tak suka letak telur. Rasa geli, tak tau kenapa. Hari tu, I pun ada letak tepung jagung sikit sebab Mak kata kalau tak letak nanti santan akan berketul.

  6. sedap tu Phong... jagung kegemaran sy... sagu pun suka juga.. bila dah jadi bubur jagung bersagu... memang meleleh la dibuatnya.

    waktu my late father masih ada... puas kami adik beradik makan jagung sebab ayah tanam jagung untuk komersial.. memang tak putus2 jagung dikebun sebab ia ditanam secara berperingkat2..

  9. Hi Phong Hong, very nice dessert. Haven't tried corn with sago and coconut milk........hmm 'lau nuar liao'. PH, I think I'll add coconut milk last or when serving. Okay tak? BTW, sweet desserts are also very expensive these days [Min. RM 3.50]. Yours will cost more if you get them from Tong Sui stalls [maybe can't find it].

    1. Kimmy, I guess it is ok to add santan before serving. Ya, I have bought Tong Sui from the man selling from the van. Mostly Chinese style Tong Sui. There used to be a cafe that specialise in Tong Sui, can't remember the name. But sudah close shop long ago.

    2. Hi PH, I cooked this dessert last wkend using fresh corn kernels and adding the santan just before serving. Hmm...easy. The crunchy sweet corn kernels with the soft plumped up sago and slightly salty coconut milk mixed in it was yummy. I wouldn't mind preparing it again. TQ.

  19. hey, i havent actually had this kind of bubur jagung but sounds like i like it too! damn lazy these 2 weeks, havnt been blogging and cooking much...in blues...I recently tried one tong sui in ipoh..corn with millet..also quite nice, no santan..just plain tong sui :)

    You are indeed the queen of nostalgic food... I have very fond memory of sago desserts. My grandma and I like to cook and eat them with gula melaka and lots of fresh coconut milk. The addition of corn into this beautiful desserts sounds wonderful.
